Hot weather dinners

What's everyone having for dinners at the moment? It's been hot here & due to be much hotter the next few days & I seem to have a frazzled brain re meal ideas. I'd love some inspiration for easy dinners - hit me with them 😁

CRUSTLESS QUICHE

At the moment I am obsessed with eating Jasmine rice with smoked salmon , sundried tomatoes, black olives and feta. When its hot it just hits the spot lovely.

I bulk cooked pasta, new potatoes, veg and chicken last night in the middle of the night when it was a bit cooler to have cold over the next few days!

We had salad Nicoise last night. It was lovely.
Ratatouille and couscous tonight.
Grilled chicken with salad.
Roast spiced cauliflower with tahini dressing and salad.
Roast salmon with stir fry veg and noodles.

Nothing too rich or heavy.

All made in the air fryer
Easy green salad

We've eaten so much of it so we're not having it again the rest of the summer. Except for salad of course.

Water melon with haloumii. Delish!

I’m grating summer veg - courgettes, carrots, spring onions and making a mix with water and gram (chickpea flour) to make a thick batter. Fry in small dollops.

I also add turmeric, onion seeds and dried chilli. Needs plenty of S&P.

Serve with tzatziki/ chilli sauce/ mayo.

What's sn 80's salad? When it's laid out as a salad bar and you build your own?
I made sandwiches and some deviled eggs and bought potato salad for lunches.
Dh bbq'ed some souvlaki and baked spuds and corn on the cob to last for a few days.

Yesterday we picked up Chinese Food.
Tomorrow chicken enchiladas.
We have central ac or it would only be BBQing or zapping something from freezer.

I only recently bought my 1st air fryer and still learning, but found it so good at this time of year to avoid putting the oven on. I've also learnt that cooked rice can be frozen!!! Mind blown. I batch cook an entire 1kg packet and freeze in serving sizes for 2. SO quick and easy to defrost and serve with curries/stir fries etc.

I'm so over this hot weather.

We had pie and chips and gravy tonight. I cannot eat another salad.

Hmm @Catcatcat111 it’s a bit along the lines of add a bit of this… then a bit of that!

I prep my veg first. Might salt the grated courgette… or might not.

(This is hot 🥵 weather cooking, ok?😁😁)

Put veg in a bowl. Leftover cooked chopped veg is fine.

Add turmeric, chilli…whatever you have to hand…and mix in 2-3 tablespoons of gram flour. Then add water a bit at a time.

The eventual raw mixture needs to be a thick slightly lumpy batter.

Heat a little oil in a non stick pan and dollop a tablespoon of the mixture onto the hot pan. Cook for a few minutes each side until golden.

Theres loads of recipes out there. Some use egg, normal flour and some fry in deep oil at which point I guess you have a pakora!

I made a few extra which will be my lunch tomorrow
