What is your favourite, easy lunch?

I often share a baguette and tub of the creamiest, garliciest, yummiest homemade cream cheese from the local cheese shop with a friend for lunch.

Friend is currently away so I may be at risk of devouring an entire baguette and tub of cream cheese on my own (which I’m fully ok with)..

Throw in some sliced red pepper for health and it’s the most excellent lunch.

What is your favourite, easy lunch?

Or homemade veg soup with sourdough from our local bakery and salted butter.

That looks amazing OP. I wish I could share the baguette. I'm on a diet and have bread envy.

My easy go to lunch when not on a diet is toasted pita bread, hummus with hot sauce mixed in, olives carrot sticks and maybe a slice or two of cheese.

Fried egg (well done, with the yolk cooked!) in a buttered bagel with rocket, gherkins or pickled pink onions, some sort of mayo/creamy dip, and loads of black pepper. So good.

Boil root veg - carrots, potatoes, Swede and parsnips with chicken stock. Season. Use stick blender. Add Crème Fraiche. Serve with chives and geyser cheddar.

Scrambled eggs on toast, with a slice of ham torn up and stirred in at the end, and some grated cheese on top. The cat particularly enjoys when I have this lunch on WFH days.

This is far from a “good lunch” but if DP and I are both WFH we sometimes have soup - usually home made - and the “TiKTok toastie” which is the most delicious, calorific thing. Melt butter in a pan, then put one slice of bread in to cook (preferably Tiger). Take that out when it’s golden and put it on the side. Replace with a load of grated cheese which you have mixed through salt/pepper, and L&P sauce. Ultra mature cheddar is best. Once that’s melted add your second slice of bread on top - make the cheese into a square with a spatula. Flip, add a slice of ham, top with the original bread. You might need a little more butter before you flip again. Serve cut diagonally with your soup, and make sure you have a napkin as it can be messy. (We share one toaste between us.)

Currently it’s a packet of Soba classic chicken noodles with a fried egg on top and a dusting of coriander and chilli flakes.

I also really enjoy a peanut butter and jam sandwich on any kind of white bread.

I don't really like runny yolk! Occasionally poached eggs are nice but I'd rather have a well done fried egg or scrambled egg any day.

I'm a bit embarrassed to say, but frozen mashed potato, heated up in the air fryer until it goes crispy on top.

normally I say "each to their own", but honestly, solid yolks? No wonder this country is going to the dogs.

Tin of salmon or tuna
Finely Chopped apple and celery
Few pecans or walnuts
Dollop of yoghurt, mayo and squeeze of lemon
(Basically turn it into a chopped salad)

I usually do a wrap with whatever protein or leftover dinner meat is around, with salad or coleslaw or couscous and maybe a lash of Nandos Perinaise sauce. It's very good.

Menemen - a Turkish dish which is basically scrambled eggs cooked with tomatoes, peppers and Aleppo pepper (or chilli flakes). I often cheat and just stir some spicy pasta sauce into scrambled eggs though.
