What is your favourite, easy lunch?

I often share a baguette and tub of the creamiest, garliciest, yummiest homemade cream cheese from the local cheese shop with a friend for lunch.

Friend is currently away so I may be at risk of devouring an entire baguette and tub of cream cheese on my own (which I’m fully ok with)..

Throw in some sliced red pepper for health and it’s the most excellent lunch.

What is your favourite, easy lunch?

I don't really like runny yolk! Occasionally poached eggs are nice but I'd rather have a well done fried egg or scrambled egg any day.

With a runny yolk there's always a danger of a snotty egg white .

Tuna mayo sandwich with red onion, black olives, red pepper in granary bread from a bakery near my mum.

Or homemade veg soup with sourdough from our local bakery and salted butter.

I make tuna mayo with red onion and pepper but never thought to add black olives - will do from now on! I also add a tiny pinch of chilli flakes.

Fried egg (well done, with the yolk cooked!) in a buttered bagel with rocket, gherkins or pickled pink onions, some sort of mayo/creamy dip, and loads of black pepper. So good.

My son hates runny yolk. In a restaurant recently he was having avocado on sourdough and asked for well cooked fried egg instead of poached. The waitress raised her eyebrow and said "you're weird" 🤣

I like to buy those little antipasti tubs of various cheese and olives/tomato's...then use them to fill a baked sweet potato which I do in the microwave.

Leftover roast dinner in a crusty white roll. I leave the meat cold but reheat the roast potatoes and any other roasted veg in the air fryer till they are hot and crispy.
Hot leftover gravy if there is any, otherwise mayo. Dab of mustard or horseradish.
Worth cooking a Sunday roast for.

Otherwise if DH is home too, mushrooms and tomatoes on thick malted granary toast, with lots of black pepper, and a sprinkle of chilli flakes. Topped with a fried egg if we are feeling decadent - I like my yolk runny, DH likes his well done, so he flips his over in the pan once mine has been removed.

Another thing I like is those chicken fillets in breadcrumbs...cook them in the air fryer and put them in a brioche roll with lettuce and peri peri mayo

Mine is a curry pot noodle with 2 slices of buttered bread. Not healthy in the slightest but I bloody love it!

Boil root veg - carrots, potatoes, Swede and parsnips with chicken stock. Season. Use stick blender. Add Crème Fraiche. Serve with chives and geyser cheddar.

That’s my Root Soup, only I add milk and serve with grated extra mature Cheddar. Parsley added before blending, if I have any - usually some in the freezer.

A lot of these sound a lot more complicated than what I would call an easy lunch!

For me:
Leftovers
Sharwoods chicken Korma pot rice (not easy to find)

If I want something I actually have to make...
Chopped up salad. Iceberg lettuce. Chopped braeburn apple. Couple of cherry tomatoes cut into 8ths. Spring onion finely chopped. Few sultanas. Couple of tablespoons of sweetcorn. Small amount chopped red pepper. Grated cheddar cheese, but not too much. All mixed up and eaten from the big bowl it is mixed in. No dressing!
