What is your favourite, easy lunch?

I often share a baguette and tub of the creamiest, garliciest, yummiest homemade cream cheese from the local cheese shop with a friend for lunch.

Friend is currently away so I may be at risk of devouring an entire baguette and tub of cream cheese on my own (which I’m fully ok with)..

Throw in some sliced red pepper for health and it’s the most excellent lunch.

What is your favourite, easy lunch?

I air fry some sweet chilli chicken the night before , then take a bag of steam rice to work with me , microwave it at lunch and throw it in with the chicken !

Failing that I’ll have a pasta pot . If I’m out and about , I’ll take a sandwich or a wrap x

When I do roasted veg and potatoes, I always do too much so I can have the rest in an omelette the next day.

Peppers, onion and mushrooms, with crispy potatoes… mmmm!

Then I put cheese on top and grill the whole thing.

Scrambled eggs with seeded ryvita, with pink pickled onions and the Bad Bagel seasoning scattered over it - delish!

For me:
Leftovers
Sharwoods chicken Korma pot rice (not easy to find)

If I want something I actually have to make...
Chopped up salad. Iceberg lettuce. Chopped braeburn apple. Couple of cherry tomatoes cut into 8ths. Spring onion finely chopped. Few sultanas. Couple of tablespoons of sweetcorn. Small amount chopped red pepper. Grated cheddar cheese, but not too much. All mixed up and eaten from the big bowl it is mixed in. No dressing!

The wrap thing I do is really quick, I get 25 mins for lunch so have to be speedy!
I don't add the cheese at the start so it's just omelette, wrap then shove feta/cheddar/spinach/ham in

Cucumber, a tin of tuna, red onion or spring onion, mayonnaise, salt & paper all chopped together eaten with crackers or fresh bread (or sometimes by itself).
