What is your favourite, easy lunch?

I often share a baguette and tub of the creamiest, garliciest, yummiest homemade cream cheese from the local cheese shop with a friend for lunch.

Friend is currently away so I may be at risk of devouring an entire baguette and tub of cream cheese on my own (which I’m fully ok with)..

Throw in some sliced red pepper for health and it’s the most excellent lunch.

What is your favourite, easy lunch?

Home made hummus (so easy with stick blender and jug) with olives and toasted pitta strips
Scrambled egg on toast with sliced avocado on top
Smoked salmon and cream cheese bagel

For lunch or dinner:
Penne with following stirred through:
Green pesto sauce - few good spoonfuls
Sunblushed tomatoes - handful
Chorizo few slices, fried
Feta - handful of chunks
Olives
Delicious hot or cold

I'm a bit embarrassed to say, but frozen mashed potato, heated up in the air fryer until it goes crispy on top.

Yummy.
I love frozen mash with grated cheese mixed in.
Just that on it's own.

I batch cook a leek and potato soup on a Sunday and stick it in the freezer in ziplock bags for the week. It's so delicious and takes minutes to reheat in the microwave. It's just potatoes, onions, leeks, stock cube, some thyme and crumbled bacon on top. I also bought a toastie maker that goes in the microwave. Total game changer. Perfect every time and only takes 5 mins. I love it

Warburtons thin protein bagel with Philadelphia, smoked salmon and rocket. Or a jacket potato with tuna, sweetcorn, mayo, diced cucumber, feta cheese and baby balsamic pickled onions.

Leftover fried rice cooked in a pan until crispy. Fried egg (with runny yolk!!) on top. Fuckton of soy sauce and sriracha. Chopped spring onions and sesame seeds. 😋😋😋

For a snack lunch, very quick and easy, a basic version of a quesadilla: beat an egg and put in a frying pan (bit of oil first, heat the pan) like a thin omelette, grate some cheese on top, add a little hot/chilli sauce then put a wrap on top. After about a minute, flip the whole thing so it's wrap side down, and turn up the heat until the wrap is nice and crispy. Fold in half onto a plate. Yum

Cream cheese on a proper bakery bagel is hard to beat. Maybe with smoked salmon. Your cream cheese looks amazing! ❤️
I do love tuna and sweetcorn with spring onions and a bit of mayo (not too much!) on a really decent baguette.
Or a good old cheese toastie. Crap bread acceptable. Ideally mozerella and cheddar. With a bit of Branston pickle on the side.
Fresh crab meat, both kinds, with lettuce and mayo and lemon and smoked paprika.

Oh man I'm hungry now!! 🤣

Dhal and chapattis. Takes a couple of minutes to heat it all up. And some fruit for pudding as I crave something fresh at every meal.

Although this week, I’ve had hummus, pitta and crudités every day.

I do that but with feta and spinach in the middle and sometimes red onion or tomatoes

Overnight oats with yoghurt, honey, whatever fruit I have in the fridge, mixed seeds, pomegranate and raisins or other dried berries and walnuts or pistachios. I mix the oats, or more often mixed grains, honey and the yoghurt before I go to bed, then stir in everything else when I’m ready to eat. I can go through till a late main meal on that.

I've only got a small appetite, so don't always eat lunch.
but quick and easy small meals I love.
soft goats cheese and crackers
marmite and butter on toast.
crumpets with a metric Ftonne of butter
a bagel with cream cheese and tomato
very occasionally when I particularly fancy it, Dairylea on toast. sometimes it just hits the spot just right.
