Oh I have broccoli for today I don't know how I feel about roasting it would blow Mrjays mind .😂

In my head, broccoli just burns immediately once you put it in the oven, but we had it roasted as part of a Hello Fresh box and it was an absolute game changer. Bite-sized florets, oil and salt, in the oven for 12-15 mins, never fails!

Here’s the piri piri meatball recipe. It’s from an Instagram page Amysheppardfood whose recipes are really good for families.

Piri Piri Meatballs & Flatbread
Meatballs:
50g panko
500g beef mince
3 spring onions very finely chopped
1/2 - 1tbsp Piri Piri seasoning

Spicy Oil:
25ml oil
1tbsp honey
1/2tbsp Piri Piri seasoning

Flatbreads:
200g strong white bread flour
1tsp sugar
1tsp salt
1tsp baking powder
1tbsp olive oil
130ml milk

Place panko into a large mixing bowl. Pour the milk over the top & stir until the milk is absorbed and the breadcrumbs are soft.

Add the beef mince, spring onions & Piri Piri seasoning. Season with salt and pepper.

Use your hands to combine the ingredients. Work it through with your hands for a minute or two until you can no longer see the breadcrumbs.

Divide the mixture into 16 equal sized meatballs rolling each one in the palm of your hands before placing them on a lined baking tray.

Place the oil in a small bowl with the honey and Piri Piri seasoning. Mix thoroughly. (If the honey is a bit thick warm the mixture in the microwave briefly)

Drizzle the spicy oil over the meatballs and roll them around until coated.

Squash the meatballs with the prongs of a fork vertically then horizontally.

Heat the oven to 200C and make the flatbreads.

Place the flour, sugar, salt and baking powder in a mixing bowl, stir the ingredients together.

Add the olive oil and milk. Stir until you have a dough.

Briefly knead it before dividing into 4 equal pieces and rolling it out thinly on a floured surface.

Put the meatballs in the oven for 15 minutes until cooked through.

Pan fry the flatbreads in a hot griddle or pan sprayed with a little oil. Fry for 2 minutes on each side until cooked through.

Serve with the meatballs, a little yogurt, salad and buttery new potatoes.

There should also be 100ml milk in the meatballs 😀

We've scrapped the usual roast chicken this week and are having honey chilli chicken. The nuggets are already cooked (months ago) and out of the freezer this morning, so only need to heat and add the honey chilli sauce. May do some special fried rice if I could be bothered.

Lemon and herb roast chicken with garlic and herb roasted baby potatoes. Will wither have it with salad or brocolli and leafy greens depending on what DC fancy

im super tired today so chicken wraps with mango chutney spread on the wraps and cucumber with some chips. I know the kids will eat it and I’ll have the rest of the chicken and make a curry tomorrow

I'm looking forward to dinner tonight! Marinated chicken thigh fillets with lots of salad and home made flatbreads - I make them with self raising flour, greek yoghurt and a pinch of salt, they are so delicious! Will make enough for leftovers tomorrow
