Baked potato fillings - no beans

We're on a baked potato diet to try and keep costs down. Please can I have ideas for fillings that aren't beans and don't cost the earth?

I'm fed up of baked beans

Mixed bean salad cold or warm!
Sweetcorn
blackbeans
Red onion
Lemon or lime/salt
Cheese grated on top

You would have enough in the mix for several portions

I'm done with beans tbh but thank you for the suggestion. Perhaps I could make vegetable chilli

(Home made coleslaw - red cabbage, red onion, carrot & mayonnaise. Really cheap to make upur own)

Tuna mayonnaise - add in a dash of horseradish or sweetcorn

Coleslaw, cheese, I used to like a bit of tomato puree, cheese and butter for a pizza ish vibe, marmite and butter.

I found a nice one on bbc food site - mix chopped roasted red peppers (from a jar) with feta cheese & greek yoghurt, pile on and sprinkle with fresh basil & sumac. As the potatoes are cooking sprinkle with garlic powder & olive oil

Garlic mushrooms? Tub of mushrooms, garlic, stock and cream

Bolognaise made with a small pack of mince and bulked out with veg

Sausage casserole just made with a packet mix to save faff

Veggie curry

Veg chilli (can literally chop up any veg you want to put in, with tinned tomatoes and spices, plus chickpeas or whatever if you like them)
Tuna mayo and sweetcorn
Cheese and coleslaw

I like cottage cheese (Longley Farm), normal cheese and butter.

Have you got a slow cooker?

We do gammon (cheap) in the slow cooker with jacket potato’s. Lasts a few days.
JP on the side with butter. Then gammon and pickles

Bake the potatoes as usual then once done scoop out the middle into a bowl and mash with some salt, pepper and butter, then add grated cheese or cream cheese and mix. At this point you can add all sorts of other ingredients to the fllling:

Chives (we have them in the garden so free)
Spring onions
Finely diced mushrooms
Crispy bacon bits
Sweetcorn

Then re-fill the mixture back in the skins, sprinkle a little more cheese and bake for about 20 mins until cheese all golden.

I have a baked potato with houmous on, and roasted veg ((courgette, mushroom, red pepper, aubergine) and haloumi on the side.

Stuffed potatoes, scoop out flesh, add grated cheese, little mustard, butter, salt pepper..add back into potato skins, top with cheese and slice tomato.

Also creamed mushrooms. Mushrooms, double cream, a lot crack pepper, half veg stock cube. Cook shrooms down, add cream (dont boil just simmer)...add crumbled stock cube, pepper and little salt.

Scoop out as pp have mentioned, mash with with chopped up and warmed corned beef and finely chopped onion.

Refill, cheese on top and into oven.

Why don’t you try some toasted sandwiches with a cheap tin of soup for a change? Just as cheap

I fry garlic, onions, mushrooms, peppers, courgettes (or any other veg I have hanging about). Add a tin of tomatoes and some dried oregano (or whatever herbs you like). Splodge of tomato puree. Let it simmer for a bit to reduce, then use it to top your potato. Known, attractively, as Vegetable Slop in our house.
