Chicken Kiev and veg. Can't decide if I'll make spicy wedges or mashed potatoes. I want the mash but everyone else wants wedges.

Yesterday I did my meal plan for the week so we had / will have as follows;

  • chicken thighs marinated in orange juice and cinnamon and roasted with mashed potatos and green beans (yesterday)
  • chicken stir fry with mushroom and egg fried rice (I am marinating the chicken in sesame oil, chilli, soy and honey)
  • minestrone and meatball soup with garlic bread
  • salad and grated cheese wraps with wedges and sour cream
  • hotdogs with wedges and coleslaw
  • breakfast for dinner- which this week will be scrambled eggs, toast, tinned toms and baked beans (I do a breakfast for dinner more or less once a week and sometimes it's pancakes, sometimes frittata, sometimes mashed sardines on toast etc)
  • beef brisket ramen- but i am cheating because I use deli sliced beef that I marinate in a bit of chilli oil and with some herbs and then use instant noodles and frozen veg

This is always a huge issue in our house! 2/5 love mash, 3/5 love chips or wedges! I'd go with mash 😉

Steak for us, we normally have steak on a Friday night but I was out last night so it’s been delayed so I can have it too! With garlic butter, sautéed potatoes, broccoli, goats cheese stuffed mushrooms and bread. I’m low carbing though so no potatoes or bread for me!

Lemon pasta with hot smoked salmon and asparagus.

We use the base lemon pasta recipe a lot, and just add different things to it.

Grate 50g of Parmesan per person, add the juice and grated zest of a lemon per person, then add a bit of oil, and a tablespoon of hot pasta water per person, and stir it through the cooked, hot pasta.

We sometimes add crab meat, or scallops and prawns, or salmon, and it goes well with chicken. I also think it would be lovely as a spring pasta dish, with a variety of green veg in it (asparagus, petit pois, baby spinach etc) and extra Parmesan shaved on top.

I've done two chicken breasts using this recipe: https://www.delish.com/cooking/recipe-ideas/a46330/skillet-sicilian-chicken-recipe/ and picked some purple sprouting broccoli and some other brassica sprouts in the garden. Cooking for one, so I'll freeze one portion of chook and heat the other up (and zap the veg first) in the microwave when I get in from Mass ca 7.30 - I've tasted the chicken sauce and it seems good.

To be followed by strawberries.
