Just that really! Looking for inspiration as we always eat the same thing and I’m so bored of it!

im always reading on here really interesting meals and wondered what everyone is eating on this miserable January day! (Miserable where I am anyway!)

We're having butternut squash, red pepper and cauliflower curry and rice with griddled, spiced tenderstem broccoli on the side because I have some how ended up with a huge amount of the stuff and I'm fed up of seeing it in the fridge!

Pasta for us. I made a sauce with chorizo, red wine, canned tomatoes, chillies and prawns.

Hake with olive and sundried tomato tapenade, steamed new potatoes and green beans. I am on a bid to have more 1980s and 1990s recipes. I am fecking sick of modern cooking with all the fusion - pork with miso and lavender topped with fried eggs in a chill masala gratin sort of shit. I want simple flavours and have told DH I want to do more cooking this year (so I don't have to eat his modern monstrosities.)

Today we are all having something different, partly to finish bits off and partly due to differing diets/preferences. DH and DS1 are having gammon steaks, DS2 is having chicken burgers and I am having vegetable egg fried rice with kimchi.

My husband does most of the cooking so I gave him a medieval cookbook for Christmas and tonight we are having Pottage with home-cooked bread and small beer.

Do you know that forks were an Italian import and not commonly found on the Engish dinner table until the early 17th century.

Five spiced beef with avocado (recipe from how to loose weight well that we all like)
Mince beef fried with five spice & chilli flakes.
Avocado smashed up with lime juice, coriander & salt
Bit of natural yoghurt
All served in little gem lettuce leaves.
Delicious, healthy and takes about 10 minutes to make.

Usually it's fish fingers so I'm happy!

Enchiladas. I made a big chilli a few weeks ago and froze half of it. Tonight I’m making enchilada sauce and will have chilli stuffed wraps baked with enchilada sauce and cheese on top.

Enchilada sauce recipe

  • 1.5 tbsp olive oil/veg oil
  • 25g flour
  • ½ tsp chilli powder
  • 2 tsp fajita spice mix
  • ¼ tsp dried oregano
  • ¼ tsp salt, to taste
  • Pinch of cinnamon (optional but recommended)
  • 2 tablespoon tomato paste or 100ml passata
  • 250 ml vegetable broth/chicken stock
  • 1 tsp apple cider vinegar or white wine vinegar
  • 1 tsp lime juice or lemon juice
  • 1 tsp brown sugar to taste

Fry spices in oil, add flour, add stock to make a roux, add other ingredients, stir until thickened.

I serve it with sour cream, salsa and guacamole usually.

I'm making 2 cottage pies, one with meat for ds (tbh a bolognese sauce with carrots and then mashed potato on) and one with red lentils, carrots and mushrooms for dp and I.
