Jacket Potato Fillings

Tonight’s fillings are leftover chilli, and cheese and beans for the little ones.

What are your favourite fillings?
I love cold fillings of coronation chicken, prawn in a Marie Rose sauce and tuna mayo with red onion.

Must haves are butter, and a crisp salad.

Baked. With the skins rubbed with olive oil and coarse salt. Must be crispy.

cut open and liberally butter. Strong cheddar, sweetcorn and some finely diced jalapeños.

or baked beans with a little curry powder and a handful of raisins mixed in - it’s like curried beans.

My favourite is mashed egg mixed with spinach, red onion, cherry tomatoes, cucumber and mayonnaise.

Love eg beans and cheese/chilli and cheese etc but my go-to is butter, cheese, tuna mayo with sweetcorn and then a bit more cheese on top, absolutely lush!

Also, none of this microwave business - oven only, for hours, and with a skin so hard you need a chainsaw to cut it!

At a food festival once I had one filled with Nasi Goreng complete with the fried egg and chilli (is it chilli?) sauce… it was actual heaven and I’ve never been able to recreate it.

I’m unusual as don’t like butter on my jacket potato.
Tuna mayo or tuna/sweetcorn
very string cheese but on the side so it doesn’t melt much.

Really crispy skin, slow cooked in the oven or air fryer then just loads of salted butter and cheese.
Otherwise cheesy beans or salsa, cheese and sour cream. If we have leftover beef in ale stew that works beautifully too.

I love loaded baked potatoes us style. Mash butter into the spuds when they come out, too with loads of grated cheddar, sour cream, bacon pieces fried until crisp, spring onions and jalapeños.

They just need longer. I find a spud in the oven takes about 1.5 hours.

Microwave first then finish in the oven.
