This week.

We have chicken ramen tonight using leftover roast chicken from Sunday.

After that I am out of ideas. And need to meal plan as have some big expenses coming up and can't afford to push the fuck it button and order in Dominoes. :)

I have a roast chicken in the oven to serve with gratin potatoes, garlic and herb stuffing, buttered cabbage and roast carrots.

Yum.

I bored myself with the tuna pasta idea so the DCs have hotdogs corn and asparagus and I have steak, corn and asparagus now.

@RiseYpres yes one must take advantage of a day working from home lol Also we will have leftovers of everything for tomorrow when I am in work so that takes the hassle out of that too - might chuck on some cauli cheese to bulk it up tomorrow night. It is hot outside but for some reason the inside of my home is always cool so we can eat this stuff and not feel suffocated.

Baked potatoes with a choice of toppings: cheese, beans, tuna and sweetcorn. We usually have this on a Wednesday because of the timings of piano lessons.

We had chicken katsu curry last night and it was lovely.Going to probably go for lamb kofta kebabs with a big Greek salad and flatbreads tonight as I have lamb mince to use.

Linguine puttanesca with melted buffalo mozzarella overtop and freshly grated pecorino. Super simple, but seems elegant (to me, anyway!) 😋

Last night we had tuna steak with garlic roasted courgettes and potato wedges.

Tonight will be a warm salad with potatoes, beetroot and mackerel.

Tomorrow will be pulled hoi sin duck burgers ( a hello fresh recipe).

Out for lunch on Saturday, so soup and sandwich for tea.

Roast on Sunday (pork).

Tonight we had a nice easy one of cold meats,cheeses,salad,baguette,dips and houmous in front of the TV with a couple of drinks.Was nice for a Friday easy relaxed one.

We are going to do a bbq later as it's still very warn here so lots of burgers.kebabs,salad and picky bits.I love eating outside in the nice weather

We are having chicken burgers made with chicken mince and using some of the new burger pickle sauce sold by Aldi. Plus salad bits and avocado and wedges.

Last night was kebab and chips from the local but it was so so good.

Todays dinner (and I never cease to amuse myself with the fact that Mon-Sun dinner is at 7pm but Sunday is 3 for some reason) is to be stuffed pork loin with roasties, cabbage, peas and carrots with gravy.

Roast pork, crackling, Jersey Royal new potatoes and spring greens, with lashings of gravy made from the joint drippings.
And as I live alone, the joint will feed me for the next four nights, in various guises. Yum!

I think I might give up on meal planning with actual dishes. Now I am going with themes

Monday- pasta night
Tuesday- Rice night
Wednesday- Breakfast for dinner night
Thursday- Potato night
Friday- soup night
Saturday - Burger/taco/hotdog night
Sunday- Roast night.

So this week for example is likely to be;

M- tortelloni pasta bake
Tuesday- greek chicken lemon stew with rice
Wed- omelettes
Thur- cheesey bacon jacket pots
Fri- Gazpacho or Asparagus soup
Sat- chilli dogs
Sun- lamb and salad

It was much too hot here today for a roast,so I bought a rotisserie chicken from Tesco and we had it with salad and crusty bread.We've still got enough chicken left over to do a stir fry with tomorrow night so quite good value and no sweating in the kitchen.

Love the taste of the skin on the rotisserie chicken as well even though I shouldn't as I am on a diet but it is allowed on a Sunday.
