I had tahini mushrooms on pumpernickel bread - was delicious. Much less faff than it sounds.

fry mushrooms, while those are on mix 1 tbsp tahini, 0.5 tsp stock/bouillon powder, 3 tbsp boiling water and toast whatever bread you use.

when mushrooms done, stir in tahini mix, bubble for 30secs or so till thickened and put on toast.

its a Patrick Holford low GI recipe

@SirenSays i used to be a breakfast skipper, much prefer to have it these days. Tend not to eat very late in evening now though…

One slice of cheese on wholemeal toast and 4 cherry tomatoes with a cup of tea. Some roasted and salted almonds mid morning with a cup of coffee. Just had some ham and home made coleslaw with a slice of wholemeal bread for lunch, followed by a braeburn apple and a slice of cheese. Trying to reduce my carbs.....

I had avocado on toast with pumpkin & sunflower seeds and a dash of lemon juice, salt and pepper, with a mug of peppermint tea.

Does anyone know a way to make the texture of avocado more palatable? I see from the posts that it’s a good breakfast but it’s too greasy for me.

You can just dice it if having it mashed is the issue. You could make a simple guacamole with it and have it on toast (diced tomato, some chilli, a bit of lime juice, S&P)

I had a time out bar and a cup of tea 😬 I’ve just had left over carbonara that I made yesterday for lunch and an hours dog walk so not too disastrous. I really need to get back into eating a proper breakfast!

Protein shake with a few oats chucked in. Need to get som bananas, the oats just sink to the bottom without one.

Going to make some overnight oats with protein powder for tomorrow
