I never, ever get ready meals and I don't know why?! A lovely ready meal and a bottle of wine sounds ideal.

Sausages in air fryer with tomatoes with all the veg left in fridge cut up smallish, drizzled with olive oil, pepper, salt and chilli flakes, roasted in other air fryer, lots of French mustard and a big glass of wine...

I had a disgustingly dirty lunch at the local cafe (cheese and onion pie, chips and gravy) so not having anything as I still feel full. Might have toast or cereal or something if I get hungry later.
DD ate at my sisters house with her cousins and DH has gone out. So truly an easy one all round today.

Last nights was pretty lazy too - ‘quesadillas’ although not even vaguely authentic just wrap with cheese, spring onion and a bit of avocado (most was black but the bit that could be salvaged) toasted in a dry pan. With a dollop of yoghurt and some cucumber and cherry tomatoes on the side.

I also love sausages (veggie for me) and tinned tomatoes with loads of salt and pepper.

White fish fillet (microwaved) with homemade white sauce with parsley (also made in the microwave) over broccoli & peas. Liberal sprinkle of vinegar.

Egg fried rice with whatever I have in the fridge chopped up in it. Cook the rice in advance and let it cool and dry out (supposed to be day-old rice but I never bother) - we prefer jasmine rice. Chop up and fry whatever veg, garlic, chilli flakes if you like it spicy, maybe some chinese 5 spice. Add the rice and fry. Beat up some eggs, make a space in the middle of the pan, add the egg and start to scramble it, when half-cooked start to stir in the rest of the pan (veg and rice), add soy sauce. Could also add a bit of chicken chopped up small (leftovers, or fry up first).

Dh made me a chilli paneer Indo-Chinese dish last week, it was amazing - that's what I want - we're having roast veg with halloumi and pesto instead.

I'm on a health kick, so all the veg I could find in the fridge gets chopped up in a roasting tin (mushrooms, courgette, red onion, 2 peppers, baby potatoes and a fistful of cherry tomatoes). Baked "lightly dusted" lemon sole fillets from the supermarket for protein.

Same oven, 30 mins total, minimal washing up.

This is sort of us this evening as the meal I had planned couldn't be cooked due to a gas leak. That's now fixed but DH is still tidying away his equipment and I can't fully get in the kitchen, so the chicken drumsticks I had put have now gone in the oven with paprika on them, along with some oven chips. It was tempting to get a takeaway but the chicken would have gone off so needed cooking anyway.

H out at a gig tonight, so on my own. 2 M&S salmon fishcakes (I like the gluten free ones) Artichokes in oil, coleslaw , baby cherry tomatoes and rocket
