I love these threads - they give me lots of ideas.

We are having keema curry made with a Patak's madras spice pot (might be quite hot), onion, garlic, beef mince, tomatoes, peas, spinach and a stray carrot. With basmati rice and poppadums and minty raita.

What have you had / are going to have?

It's Sunday so no dinner as we have a roast about 2pm- roast chicken today.

Tomorrow is sausage and mash with peas, broccoli and lots of gravy!

Had a milk glut for some reason - so did a whole load of roast root veg, roasted a whole cauliflower and then made a luscious cheese sauce, poured it over then back in the oven to brown. Have enough for tomorrow's evening meal and two portions for the freezer (just me in the house )

Tofu Buddha bowl. Crispy tofu, roasted sweet potato, chilli and soy courgettes, edamame and either a bit of brown rice or a handful of spinach, depending how virtuous I'm feeling. Dressing TBD but probably soy and lime.

Roast chicken with pigs in blankets, roasted parsnips and sweet potatoes, stuffing, carrots, broccoli, spinach, roast potatoes and mash.

Crème brûlée for pudding.

We had made from scratch chilli made with veggie mince. Enough left to have with wraps for lunch tomorrow.

I boiled a gammon joint in the pressure cooker earlier, we had some with mashed potato, carrots, peas and parsley sauce.

Tomorrow I will make some soup out of the stock. The leftover gammon will be used in sandwiches and a pasta bake.

Watercress risotto and home made garlic bread for all and, for DH, the only non vegetarian in the house, added in two minty lemony lamb cutlets. And, as a vegetarian not used to cooking meat, I did a flipping good job of them too, if I do say so myself Grin

I put a half leg of lamb in the slow cooker this morning so just had a really tender lamb stew with brown soda bread and butter.

@pentopaper no I actually do plan that far ahead Grin usually further as I do a monthly shop and cook triple every time I make something that freezes well. Then I only do top up shop for salad and chocolate fruit.

There is lots of wiggle room, I often switch the meals round depending on what fits what we are doing Grin

I must say that it seems like a not so humble brag but wanted to give people ideas as I always love reading the ideas! I hate thinking of dinners so if I plan like this, I don't get into a mild panic Blush

Salmon baked over greens (beans, courgette , asparagus) with ginger, garlic, spring onions, sesame seed oil, tamari sauce, and basmati rice. Topped with crispy chilli ☺️

DP had steak with onions, parnips, mashed potatoes, cauliflower, carrots, broccoli and sugar snap peas.

I had cheese and onion quiche with the veg listed.

Thai chickpea burgers with pak choi and rice. Originally made as a Mindful Chef recipe but I've given up on the homemade sweet chilli sauce (which I turned into toffee on the first occasion) and bought a Heinz one instead

Chicken parmigiana...which is chicken breast seasoned and flattened to an even thickness, coated in a mixture of grated Parmesan and dried breadcrumbs, fried briefly each side to crisp up then on oven tray and topped with a layer of tomato sauce (just couple of minced garlic cloves and carton of passatta with teaspoon of oregano, simmered until reduced to a thick sauce) then a layer of prosciutto, sliced mozzarella and more Parmesan. Cooked in oven for 20 min.

Mmm I love these threads, they help me meal plan! Options tonight are veggie burgers with zucchini on the side, or split pea soup with added roasted cauliflower, it's in the crockpot, I try to make a soup every Sunday that I can freeze half.
