What is your favourite pudding?

So we are getting into cooking a roast each week and have started to make the effort of making a proper pudding as well. I sometimes get stuck in a bit of a crumble rut but have recently tried trifle, key lime pie and treacle tart 😋. I need some inspiration of new puddings to try! What are your favourites? (We have to eat gluten free, but I'm fairly happy to adapt a recipe)

Have you tried Becky Excell's Sticky Toffee Pudding (gluten free)? Try this. It's great and pretty simple. Tastes amazing and you'd not know it was GF at all

Trifle. I bloody love a trifle. Pecan pie is a close second.

Banoffee pie or sticky toffee pudding.

I’ve been known to order and take home if it’s on the menu but I’m too full after a meal to eat it Grin

Banoffee pie. Crush some (GF) digestives and mix with melted butter then press the mix into the base of a flan tin to create the base. I use about 200-250g biscuits and around 80g butter. Put it in the fridge for about an hour to set.
Take a can of Carnation caramel (sold alongside condensed milk in big supermarkets) and spread over the biscuit base. Add a few sliced bananas (enough to cover the pie) and then cover with whipped cream and grate a little chocolate over the top to decorate.

Coconut rice pudding with caramelised pineapple from the McNean House cookbook. I usually don't bother with the pineapple though, the pudding is amazing even just by itself.

Sticky toffee pudding with lots of sauce, or a self saucing lemon pudding. Where you make a lemon sponge, pour the sauce over the top and bake, the sauce goes through and pools at the bottom of the dish.

Homemade rice pudding with lots of grated nutmeg and a bit of powdered cinnamon on top when cooking. Then served with a spoon of jam and some cold milk on top.

My favourite dessert has got to be trifle! I put sliced Swiss roll (other cake would do) at the bottom and sides of a bowl, put fresh raspberries and/or strawberries on. (I don't bother with jelly). Custard on top (packet stuff, made with a bit less milk than recommended), then fresh cream, chocolate flakes crumbled on top.

Tarte au citron - no meringue.

Sharp and sweet and heavenly.... always 100% of the time my favourite option UNLESS there's an affogato going, in which case I shall have both, thanks Grin
