What is your favourite pudding?

So we are getting into cooking a roast each week and have started to make the effort of making a proper pudding as well. I sometimes get stuck in a bit of a crumble rut but have recently tried trifle, key lime pie and treacle tart 😋. I need some inspiration of new puddings to try! What are your favourites? (We have to eat gluten free, but I'm fairly happy to adapt a recipe)

I came on to say sticky toffee pudding, or this baked white chocolate cheesecake. So good!

Delia has a chocolate bread and butter pudding that works with gluten free sliced white (DM is coeliac so I've tried it). So delicious.

Lemon self-saucing pudding / Lemon Surprise

I made it on Christmas Day as we're not Christmas pudding fans. It has a very small amount of flour as it's mostly whipped egg whites. There are some GF recipes around but I just substituted the small amount of normal flour for GF.

Hot chocolate fudge pudding. It's so easy. You make a very easy cake batter (no eggs), put in pan and then sprinkle on a load of brown sugar and cocoa followed by hot water and then bake. The cake rises to the top and you get a delicious choc fudge sauce under it. Serve with double cream. Easy to make gluten free.

Oh god this thread is making me crave pudding I'd have pudding over a dinner anytime I love all the old school puds, roly poly, jam suet pudding treacle pudding sweet mincemeat pie, really good rice pudding, bread and butter pudding.....any pudding really....oh and custard

I make a peach and pineapple crumble, nicer than it sounds with crumble made with jumbo oats and brown sugar, butter rubbed in so it's largish bits that go biscuits when baked.....lovely

Banana butterscotch pudding-so easy to make and super tasty! I use Peyton and Byrne recipe.

Yeah that's similar to mine!! My recipe has no egg though and doesn't get so burnt on the top!! I found it too sweet with ice cream and the cream goes so well with the hot fudge sauce.

Pavlova. Use Delia's recipe, leave it in the oven overnight, it's superb.

Also Delia's sticky toffee pudding.

Jamie Olivers 'Sheila's pudding' really easy, great in winter with custard or summer with cream. Assume can be made with GF flour

Oo not heard of shiela’s pudding which I see is version of Eve’s pudding.
I absolutely love peaches and nectarines. I’m making this next summer ! A lot i fear.

I am really struggling to think of a pudding I don't like, tbh. But then I've got the kind of sweet tooth where I will eat a bowl of chocolate chips and marshmallows melted together or a half thawed frozen cheesecake so that is not terribly surprising.

Some great ideas on this thread though! I think that may be my January diet ruined before it started Grin
