What is your favourite pudding?

So we are getting into cooking a roast each week and have started to make the effort of making a proper pudding as well. I sometimes get stuck in a bit of a crumble rut but have recently tried trifle, key lime pie and treacle tart 😋. I need some inspiration of new puddings to try! What are your favourites? (We have to eat gluten free, but I'm fairly happy to adapt a recipe)

Sticky toffee pudding the co o- do one I love it a very rare treat,
Jam roll poly have some in the freezer at the moment must get some custard,
Apple crumble but with oats.

Coconut rice pudding with caramelised pineapple from the McNean House cookbook. I usually don't bother with the pineapple though, the pudding is amazing even just by itself.

Anything with lemon. So cheesecake,tart,roulade. Or Tiramisu but has to be a huge portion.

Mincemeat & apple crumble with oats instead of regular flour. Drool.
There was a chocolate roulade my mother used to make many years ago, I will try to find it. Definitely GF.

Homemade rice pudding with lots of grated nutmeg and a bit of powdered cinnamon on top when cooking. Then served with a spoon of jam and some cold milk on top.

This looks extremely similar to the roulade my mother used to make. She used to make it, slice it & freeze it. I still do, sometimes.

I've also made this in the past. Very nice.

self-saucing puddings are delicious - the easiest is a self-saucing chocolate pudding which is very rich - we like it with berries and melting vanilla ice cream. There are also recipes for self-saucing sticky toffee pudding which is also delicious! BBC Good Food have a self-saucing jaffa pudding which is chocolate orange and also yummy.
steamed syrup sponge pudding - an also ring the changes by using different flavoured jams and lemon curd
chocolate tart with a biscuit base
bakewell tart
spotted dick with custard
banoffee pie
tiramisu
trifle is very versatile - there are lots of recipes for twists... my favourite is a black forest one with brownies at the bottom and cherries in the layers

Eve's pudding, reminds me of the apple trees in my grandparents' garden when I was a child, my gran used to make a huge Eve's pudding in a pyrex dish and a big jug of thick custard when we all went for dinner in the colder months.
