What is your favourite pudding?

So we are getting into cooking a roast each week and have started to make the effort of making a proper pudding as well. I sometimes get stuck in a bit of a crumble rut but have recently tried trifle, key lime pie and treacle tart 😋. I need some inspiration of new puddings to try! What are your favourites? (We have to eat gluten free, but I'm fairly happy to adapt a recipe)

You'd need to substitute the flour - maybe coconut flower would work?

I do half quantities in a 1lb loaf tin which is the right amount for one tin of custard and Sunday pudding for 4
