Hi all

This is our second thread about upping our veg and fruit intake on a daily basis.

We tend to list what we've had to keep us accoubtable and generally chat about how to increase the rainbow on our plate.

We don't always make 10 but anything more than you would normally is great. I like to at least get 5. 10 or even sometimes more is a great day.

All welcome whatever reasons.

7.) carrot and ginger soup
8.) stir fry kale and green beans

It's hard to get 10 in, I need to try harder.

Welcome everyone new and well done on everyone's veg and fruit intake.

I think you are doing really well.tk be honest I class a good day as anything above 5. So those at 7 and 8 who think they're not doing well, i think you are. As long as we're upping our intake generally then I think it's a good thing.

I have found this has stretched my quantities upwards though I may have reached 10 only or twice! It also has helped me notice variety (or repetition) and shown me that if I but it and prepare it I will eat it. I used to think I'd not overcook to avoid waste. Turns out I love leftovers for breakfasts.

Yesterday wasn't great we had McDonald's brunch so not the healthiest but k had orange juice to drink and 2 lattes but I had a tangerine when I got home

Dinner was better, chicken and chorizo casserole with peppers, onions, chickpeas and sweet potato mash

Plus the last of the Apple crumble!

Today so far....

Breakfast....Shreddies and banana

Lunch will be.... homemade leek and potato soup, crackers and cheese and sliced apple

Dinner is venison and red.wine sausages, mash, brocolli, carrot and swede mash

So estimating 4/5 for yesterday. And 5/6 for today

I added a lot of frozen chopped red onion to our very quick beans and tomato tea yesterday just because of this thread. 😂So thanks everyone!

Hi,

I've been watching this thread all week as I'm aiming to improve my healthy habits this year - one of which is increasing veg and fruit each day. I'm not a fan of fruit at all apart from summer fruits so that will be more of a struggle. This week I have been swapping out some meat to get more veg in (not going veggie though) - so I make a balinese curry once a week with chicken and green beans but I swapped the chicken for cauliflower and it was really good. I'd like to find more ways of doing that rather than just trying to add lots of veg on the side of meals. Any recommendations of meals would be appreciated!

I do a lot of stews @Titsywoo Today is a sort of Frenchish style one
Fry 3 onions until translucent. Throw chopped veg (2 carrots, 3 celery stalks, quarter of a swede, 2 red peppers and fry until the onions start going golden. Add a lot of herbs (3tsp herbs de provence, one each of thyme and lovage) some stock powder, a box of passata, a cup of dried green lentils, a bag of whole chestnuts, water and a slash of balsamic vinegar. bring to boil and simmer for 30 mins. Add a tin of beans (black or cannelloni) and taste to check seasoning. Serve with green veg.

You need protein. If you take chicken out of a favourite meal replace it with a tin of beans and cauliflower, then half the portion of rice of potatoes to go with it.

Tbh I've been swapping the pasta, rice and potatoes for leafy greens a lot.
I do like black beans aka black turtle beans in any spicy recipes like a chili or just as a soup.

Definitely need this thread! Need to lose a bit of weight so have been using Nutracheck, which has shown me how little fruit and veg I'm managing at the moment! I'm thinking of getting some frozen fruit to add to a yoghurt in the mornings as a start. Do I just get out the portion I want the night before? Or add them to the yoghurt and mix it all up? I want something easy as I have a 7mo who currently cries whenever she is out of my arms at the moment Sad

@Titsywoo I use a lot of spiralized veg - maybe a bit faddy but I like it. So lightly steamed butternut or beetroot or carrot noodles, shredded mixed veg as big salads or instead of rice or pasta. Root veg wedges and crisps / shoestring fries as well.

We're having aubergine and courgette bake tonight. Vegan parmigiana style.
Side of leftover cauliflower bake.
We also have green lentil chilli which even the non vegans prefer to mince chilli.

Bean stews with lots of veg, basically ratatouille with any kind of beans you like. Black eyed are nice.

Curries are great to swap the meat out for veg, you can make a lentil dhal to go with it too.

Lentil shepherd's pie. Vegetable lasagne with plenty of spinach.

monsoon i take it out either the night before for breakfast or pop it in my porridge when it's nearly cooked. The warmth is enough to defrost them.
I took cherries out this morning to go on my yoghurt after dinner.

My food shop is arriving shortly so I can make an effort!
I'm a bit obsessed with this soup at the minute. Considering I'm not a huge soup, or lentil fan, you can take from that how nice is it Grin

I usually stir in the frozen berries to the yoghurt with a sprinkling of low sugar granola. The berries are a bit crunchy but not rock hard and the texture is lovely. Blueberries and raspberries are best. Strawberries can get too frozen.

If you defrost them they go very soft, a bit like stewed fruit.

I bought a few Bol ones to try and I did kind of enjoy the sweet potato and corn one but I'm not sure I'd get it again.

The only ones I really like are the one I posted and also the cully and sully range. I know what you mean, I think it helps this one just has "normal" ingredients

I made tomato soup today but I'm struggling to know how many portions it will count as? Help please!

One onion
Two large carrots
1 carton of chopped tomatoes
3 medium salad tomatoes
1 can of chickpeas
3 frozen spinach lumps
Squirt of tomato puree.

Cooked and shared all out equally between 3 people. Would that be two or three portions?
