Hi all

This is our second thread about upping our veg and fruit intake on a daily basis.

We tend to list what we've had to keep us accoubtable and generally chat about how to increase the rainbow on our plate.

We don't always make 10 but anything more than you would normally is great. I like to at least get 5. 10 or even sometimes more is a great day.

All welcome whatever reasons.

I made tomato soup today but I'm struggling to know how many portions it will count as? Help please!

One onion
Two large carrots
1 carton of chopped tomatoes
3 medium salad tomatoes
1 can of chickpeas
3 frozen spinach lumps
Squirt of tomato puree.

Cooked and shared all out equally between 3 people. Would that be two or three portions?

I don't give it too much thought after the event tbh. Maybe call it 2.5! Before or while cooking I have checked jars/ tins for portions (however labels may vary!) I have a simple scale out in the kitchen so I do occasionally weigh stuff. It's not necessary to repeat that often once I've an idea what 80/ 160 /240 g looks like.

One onion

I'd say 2.5 or 3. It depends how strict you want to be. I would have probably guessed that as a 2 but if you actually break it down it's nearer 3. I always class whizzed soup as 1 but chunky soup I break down what's in it.

  1. Third of a portion of onion/2 thirds portion of carrots
  2. All the tomatoes together probably make 3 portions depending on size of carton. Add in spinach.
  3. Third of a can of chickpeas.

After reading a thread on here recently we had twice baked potatoes. I had mine mixed with vg butter, mayo and vg mozzarella and spring onion. It was so good.

Today is my 1st Jan and I have been eating terribly for the last 2-3 weeks.
So today I made a decent start (I think)

2 bananas mashed into peanut butter

A huge plate of spinach wilted with 2 eggs

5 dates
2 satsumas
1 Apple

A half a bag of rocket

Not bad considering yesterday my only coloured variety food was Quality Street!!

Hi, I’d like to join your fab thread for some accountability. I’m vegan but have slipped into junk food with the ever increasing options now available so I’m hoping to get back to my whole food roots!

No.5 was egg and veg muffins. Delicious and great for breakfast. I'm trying to reduce my intake of refined grains (I love a bowl of cereal sadly but it's unhealthy), so looking for anything quick, filling and nutritious!

Starting the day off well with a new recipe I got off here for banana pancakes. One banana, 2 eggs and a handful of frozen raspberries (recipe said blueberries but we don't have any) so that's 2 already!

This thread is great! Haven't read every post but hoping to join you soon - I need to work up to it after my baby is born and I'm back to eating normally (currently 35 weeks pregnant and can now only eat a weird selection of bland foods that don't give me reflux).

Is there a list of recipes anywhere that people have found helpful for busting lots of portions at once?

I like this aromatic squash curry recipe. Easily gets in five portions and you can add in as much extra veg as you want as well. It's vegan, but if you're not, it also works well as a side dish for lamb:
