What is on your ideal cheeseboard ?

Three 'firm' cheeses - Red Fox Red Leicester, Double Gloucester and Mature Cheddar. Two or three blues - Mature Blue Stilton and Shropshire Blue. Probably Yorkshire Blue as well. Butter if you want it. Water biscuits, sea salt crackers and digestive biscuits. Plus one or two dessert apples.

Drinks - Cabernet Sauvignon or Zinfandel, dry Chardonnay or vintage port.

Cheeses:
Hard - Smoked Cheddar, Cheshire, White Stilton with Apricots (or mango and ginger)
Soft - goats cheese with honey and walnuts, boursin (I love boursin)
Blue - Roquefort

Butter - but of course! That lovely butter with sea salt crystals (mouth watering)

Crackers - Hovis crackers, Cornish Wafers, Cheese Melts

Sides - Grapes, apples, chutney, prosciutto

Lovely red Rioja, Lidl do a nice one.

Cheese - hate blue cheese but some nice Brie or Camembert, smoked cheese, some gruyere (is that how you spell it), port salut and some mature cheddar. I’m not fussed, I just like cheese.

Now I really want a cheese board!
Mine has to include Stilton and Applewood. Morrisons salt and pepper fresh crusty bread or nice crackers. Olives, mixed nuts, apple and pickles. Hmm, mine sounds more like a plough man's lunch!

Soft: black pepper Boursin - really hard to find these days. And Pié D'angloys.

Hard: Blue Stilton - really creamy, pale crumbly and young not waxy and yellow. Maybe Comté and a really good slightly acidic cheddar like Chewton

Lots of grapes, fresh figs, celery sticks, pots of home made chutney, Carr's water biscuits, charcoal crackers and other fancy seedy crunchy biscuits. And some Hovis biscuits too.

Some light red wine - Fleurie or Brouilly or Duo.

I want this for dinner now. Not had cheese for ages!

Glad too see we have lots of fans of lots of cheeses. I once tried Danish Blue - the flavour was way too strong for my taste but it made a good pasta sauce. I think I adapted a Pizza Express recipe.

A lovely strong West Country cheddar, Tintern cheddar, Gruyere, a Brie, Oxford Blue.

Has anyone heard of a hard yellow cheese called Mamod or Mammot or something similar? I had a gorgeous cheese at a restaurant in Wales last year and when I asked, that’s what I thought they’d said it was called. I asked twice and then was too embarrassed to ask again, and thought, I’ll google it but bloody google hasn’t been able to shed any light on the matter.
