Favourite risotto

I'm a pretty good cook and make most of our meals from scratch but I've just learned how to make risotto and we're loving it. The one I make has bacon lardons, leeks, mushroom and butternut squash in with parmesan. I have the ingredients for crab and saffron coming this week.

I'd love more suggestions of flavour combinations please. We eat anything (except offal!)

Left over shredded roast chicken, any kind of greens and chorizo.

I also genuinely think this is one meal it's worth going to the faff of making a real chicken stock for. I time it so roast on Sunday, get all meat off carcass and either freeze or use ASAP to then use carcass for stock. Make risotto on Friday night while drinking wine!

Oh, and I like to use a cheap supermarket own dry vermouth for the risotto and save my good wine for drinking Grin

Onion risotto is delicious , and simple. Or chestnut mushroom is another favourite. I always have it quite plain I guess, but it tastes amazing. Parmesan on top of course.

King prawns, basil and peas.

Also, risotto is a great accompaniment. So if we e.g. eat sea bass I will make a basic risotto with small prawns and peas to accompany it rather than potatoes etc.

We love this Gousto one, and I like that it's veggie. It's honestly delicious! You basically chop and roast all the veg with the garlic, make the risotto with the chopped brown onion, and use the tomato paste, rice wine and stock cube to make the stock for the risotto Smile delish!

Cheating really as it's more of a kedgeree than a risotto and is a bit of effort to make but one with smoked haddock, chorizo, egg and peas with curry powder etc.

Or a lemony one to serve with salmon.

Op's one sounds like the one i make for leftover roast chicken, with roasted squash and leeks!

I really like smoked haddock in a risotto, with some wilted spinach. Put the haddock in raw, and it cooks along with the rice.

Bacon lardons and pea or else I use left over gammon.
I always try different ones but all the family want is ham & pea, even my DH who has quite an adventurous palette.
I also like chicken and lemon but it's too tangy for the kids!

Oh and it has to be made with veg stock rather than chicken. They can taste the difference!

This sounds amazing
The egg yolk oozes onto the risotto and melts the cheese. It’s fabulous. Try a bit of smoked fish with it as well, either smoked salmon or cooked fish.

Butternut squash risotto is my go to (except when DS is home). I roast cubed butternut squash in the oven (drizzled with olive oil and sprinkled with a few chilli flakes). Then make the risotto with onions/celery/pepper/chopped sage and when squash is cooked, mash half of it and stir it in to cooked risotto. Then add some cubes of squash for texture. Sprinkle with parmesan and fried sage leaves.

Finely chopped celery and onion fried off in a bit of olive oil, add butternut squash chunks and some dried chilli flakes. Serve with feta crumbled on top.

(Instant Pot for me, great for risottos.)

Similar to you sosig, I'm a competent cook and really enjoy cooking but have only recently discovered risotto. My poor family approach the dinner table with trepidation now in case it's yet another risotto Grin

Current favourite is a Gousto recipe for a cheesy chorizo risotto, but I'm here for all the suggestions Grin
