What is the ultimate sandwich toaster recipe?

I've bought myself a deep fill sandwich toaster, what is the ultimate toasted sandwich / omelette / other sandwich toastable food!?

My grandad used to make me the classic cheese and ham toasties with nice Italian prosciutto cotto (lived in Italy then) and cheap plasticy cheese slices.
I've tried various combinations but expensive ham and cheap cheese is the best imo.

The deep fill ones I like cheese and onion in. DS loves cheese and ham.

We just got a panini press that does both and so far plain cheese toasties are popular with the youngest children as they are so easy.

As it's lockdown roasted veg and Brie is working for me and Brie and bacon is DS's choice.

DW likes mozzarella and tomato.

So many options, enjoy!

Digit to put that the kids experimented with the deep one the fist few time and cheese with beans or spaghetti hoops were very popular Blush

Tuna and sweetcorn mixed with Mayo, topped with sweet chilli sauce and grated cheese in white bread. Messy but delicious.
Another one I used to make is just cheese and pickle, but watch the pickle gets very hot.
Are the wells deep ones? If they are, with a bit of careful prep you can do a whole egg in each. Just push the bread into the dip and carefully crack an egg so the yolk goes into one dip and the white goes into the other. Season with plenty of salt and pepper and don't cook for too long so you have a soft yolk. I'm craving one now but our toastie maker is a panini one so no dips.

Today DS dug out his one from uni and we had Brie, bacon, rocket and vodka chilli jam. In brown seeded bread. Which was liberally buttered on the outside.

Tbh I don't really usually like toasties. It's just a molten hot pocket of cheese and other assorted shite but this one was really nice.

Lemon curd. Be careful, can be a bit like napalm when it comes out.

Do things like bacon go in already cooked? And are the fillings like normal toasties. So bread buttered on the outside and filled? Don't beans make it all soggy?

Ooh my favourite that I used to get from a cafe near work (before lockdown) was chicken, sundries tomatoes, pesto and cheese! Deeeelicious.

Also partial to a good old club sandwich

You know you can cook pancakes in them right?
Mine is a George Foreman lean mean grilling machine so is on the slant and if I attempted pancakes they would feed some random Australian Grin
