What is the ultimate sandwich toaster recipe?

I've bought myself a deep fill sandwich toaster, what is the ultimate toasted sandwich / omelette / other sandwich toastable food!?

I find one ingredient + cheese with or without a condiment is the best formula.
Although mixing whatever is left over from a fried breakfast (usually some sausage, scrambled egg, mushrooms and beans) with some cheese and a little ketchup or brown sauce is pretty freaking amazing

Cheese and onion, occasionally with either mushroom, bacon or ham.

For the ultimate you need more than one variety of cheese. Eg layer of extra mature cheddar, onions, mozzarella, mushrooms, layer of Edam.

Both dc also love cheese & tomato purée with whatever leftovers are to hand for a pizza type toastie.

(FYI, we're all tiny and bird like and one toastie feeds all 4 of us for a week, we definitely don't eat two each or anything)

Savoury, tuna mayo and cheese.

Sweet, no need for bread. Make triangular cakes! One egg, 50g of sugar, flour and butter.

If you aren't a fan of butter then brush bread with olive oil instead.

Apple. If you can be bothered, cook and purée some real apple yourself with a bit of sugar. If you can’t, buy tinned ‘pie filling’ apple. White bread. Dust liberally with icing sugar when cooked. Heaven.

There was an absolute humdinger of a thread about this a couple of years ago if you can be arsed to torture yourself with MNs absolutely terrible search function.

Boosted sales of toasters no end and had hundreds of ideas including cake!

If you Google cheese postie and look at images, you will see a ton of really great recipe idea cards. For some reason, since they shut down I can't find all the recipes on any website.
My kids are desperate for the Jaffa cake one.

I like mushrooms, corned beef and cheese with Tabasco. You can add thin slices of onion to this too if you wish.
