Malteaser cake recipe - help a Catholic out

Help on an Ecumenical matter please Grin So I've been dipping into the world of traybakes - I can make a pretty respectable caramel square (nice, thick, chewy caramel!) and Mars bar crispy square, but I need a good recipe for Malteaser cake.

I tried the BBC Good Food recipe the other day and it didn't have that lovely feeling of your pupils dilating with the sweetness of it all like a good traybake normally has. Am I doomed to never get it right because of my lack of Prod blood? Help! How can getting the right ratio of digestive biscuits, butter, syrup and chocolate be so hard?!

I'm normally a good baker! Honest!

I’m sure on this occasion we’ll be forgiven.

I’ve finally managed to get my hands on some maltesers and condensed milk, albeit the light variety. So after polishing off my raspberry and chocolate scones made from the Avoca recipe, I shall be moving on to malteser squares.

I've laid in stocks of Aero balls so I can make something from that traybakesandmore website for a birthday celebration coming up soon. Can't wait! Those fifteens were so easy and quick to make. I don't normally like desiccated coconut but it works well there.

No condensed milk in Asda today... So my mum gave me a tin of it she had at the back of her pantry. Dated best before March 2019. Do you think it'll be OK?

I plan to make snowballs tomorrow.

I usually go by the sniff test. I have a nose like a bloodhound and am a super taster so not much gets past me Grin.

You’re right about the condensed milk though. I’ve been searching for it for weeks. Finally managed to get my hands on 2 of the light variety yesterday.

I made some malteser squares for the first time today.

It'll be absolutely fine. I found a tin of evaporated milk in the cupboard day with a 2016 best before/use by date. Reader, I have been adding it to my coffee for the last 24 hours and am still here to tell the tale, so I think a mere one years out of date will be fine, especially as all the added sugar in condensed milk will be acting as a preservative.

There were about 100 tins of evaporated milk in Asda. So it's for putting in coffee ? I had no idea what it is for and don't think I've ever seen a recipe that calls for it.

I used the March 2019 tin and it seems fine. My friend said she recently used a 2012 tin and it was also fine. Shock

Sorry @Gasp0deTheW0nderD0g. I’m just realising you said evaporated milk. It’s condensed milk that is used in 15s and snowballs.

@Tomorrowsanewday no worries, my sister tried to use evaporated milk instead of condensed and it Did Not Work

I have now made snowballs and lemon squares. Lemon squares are a new departure for me. They are 'setting' in the fridge but I'm not convinced the icing (made of juice of one lemon, marg and icing sugar) will ever set Hmm

@KayakingOnDown the recipe I use for lemon squares the icing only has icing sugar and lemon juice.
It will probably set a little more softer but still sounds yummy.

@Tomorrowsanewday that recipe is almost identical to the one I used (my mother-in-law 's) but I used marg instead of butter.

I wonder which is best for tray bakes - marg or butter?

Before lockdown it was quite a few years since I baked. Usually apple crumbles or cheesecakes.
I tend to stick with butter.
I said to my Dsis today I’m nearly fed up looking at buns and cake.
Not the words I ever thought I’d say Grin

I rarely baked before lockdown, apart from birthdays and Christmas. Victoria sponge, chocolate cake and cheesecake was about the height of it.

We hardly ever had sweet stuff in the house pre-lockdown.

Currently in our home we have: fairy cakes, homemade chocolate chip cookies, snowballs, and lemon squares.

Strange times.

I always tend to use butter but am aware margarine is better for certain recipes.
