Malteaser cake recipe - help a Catholic out

Help on an Ecumenical matter please Grin So I've been dipping into the world of traybakes - I can make a pretty respectable caramel square (nice, thick, chewy caramel!) and Mars bar crispy square, but I need a good recipe for Malteaser cake.

I tried the BBC Good Food recipe the other day and it didn't have that lovely feeling of your pupils dilating with the sweetness of it all like a good traybake normally has. Am I doomed to never get it right because of my lack of Prod blood? Help! How can getting the right ratio of digestive biscuits, butter, syrup and chocolate be so hard?!

I'm normally a good baker! Honest!

Interesting re driving. Rush hour in Belfast isn't particularly pleasant but I'm used to it I guess.

I remember when I had only just passed my test I was asked to collect my brother who lived off Tate's Avenue at the time. I lived in north Co. Antrim, so the M2 was scary enough for a young driver, but to navigate my way to South Belfast! I was utterly petrified. I managed though. And it really helped me - I'm now a confident driver and drive anywhere in Belfast (despite not living there) without giving it a second thought. I know people from rural NI who just won't drive into Belfast.

I can drive in Dublin in rush hour no problem, can even do the Walkinstown roundabout but Belfast - close my eyes and hope for the best Smile

I have no idea where I am most of the time in Belfast. But I have zero sense of direction.I can't find my way from our house to Dhs work, about15 km away.

I’ve found malteasers and Aero both work well. We’ve had mint aero and DH bought regular aero with the shopping today and said “so traybake...” when he was unpacking the shopping. We’re out of baking paper though ☹️

We know several parts of Dublin well due to getting lost. We know to follow the LUAS lines once we find them to escape. Then we head south on the motorway, following Limerick directions, until suddenly it splits and we have to avoid going to Limerick, or else we have a cross country trek near HolyCross, which we also know quite well by getting lost.
M dd1 happily goes anywhere and everywhere and never gets lost; if we arrange to meet her she factors in that we will be late, and has her satnav sorted to redirect us.

I don’t know Dublin well at all. We came down a year or so ago for the Josh Groban concert in the O2. Fab u lous, but we used the Enterprise.
We stayed by the Custom House and the views of The Ha’Penny Bridge and the Harp at night were beautiful, all lit up.

We spent a lovely week in Westport when DS was young and many years ago went on a cross community holiday to Kildare.

Me and DH finally finished the rest of the 15s and Lemon squares. I’ve bought fresh cream so I’m going to do Pineapple delights later this afternoon.

I don’t usually use baking paper Lunawuna and they come out of the tray ok.

We get the bus for Dublin most of the time, but usually get lost coming back from Belfast if we detour into the city.

Pineapple delights
BASE
4ozs butter
8 ozs digestive biscuits crushed

TOPPING
4 ozs butter
6 ozs icing sugar
1 Egg (optional, I didn’t bother as it’s uncooked)
8floz/240ml cream
1 tin crushed pineapple (435g, 298g when drained)

BASE
Melt butter, add crumbed digestives
Press into tin.
Cook in oven at 160* for 10 mins. Leave to cool
(Cooking is optional. It just makes the base crispier)

TOPPING
Beat butter and icing sugar together with 2 tbsp pineapple juice
Spread on base.
Whip cream and add very well drained pineapple.
Spread on top.
Crumble 1-2 digestives on top
Chill for 2 hours

This makes about 20 generous squares

I made a summer vegetable filo pastry tart today, I will not do it again. I had a soggy bottom, I did not get a Hollywood handshake, I got put out in pastry week!

I tried the Avoca scone recipe. They are lovely.
Thanks to the poster who mentioned them.
I’ve said to DH he’ll be sick looking at home baking!

The trouble with me is DS doesn’t like most of what I make so me and DH end up eating 16 between us. So much for me watching my cholesterol Grin
