Looking forward to some interesting store cupboard creations!

Ours is nachos with pulled pork on top with Mexican spiced (probably completely inauthentic) rice. Pork and rice both from previous meals and out of the freezer, will add a tin of sweetcorn and maybe kidney beans depending on whether it looks enough (large family)

Crisps and dips bought this week as they were pretty much the only aisles that still contained food.

Carb heavy but I don’t care, I’ve had to cancel my wedding 😭

I'm having a day off! Every meal for the last month has been cooked from scratch. Tonight we're having chicken nuggets and chips!

We had a pasta bake made with a jar of chunky vegetable pasta sauce with cheddar and blue cheese melted in and then seasoned/flavoured with bbq sauce, smokey barbecue seasoning, chilli flakes and smoked paprika. We baked it and topped with more cheese for 10 minutes. It was a bit of a slung together meal but tasted nice.

A take-away curry apparently. It's DH's turn to cook and he couldn't be bothered. I am having saag paneer. I have missed saag paneer since DH became vegan and I can't be bothered to cook it just for me and cook something else for DH and DC.
From their menu on deliveroo, we discovered that our local curry restaurant serves several vegan dishes so I am looking forward to when we can next go out for a curry too.

I put a whole chicken in the slow cooker.

Coated it in a spice rub: garlic powder, seasoning, hot paprika, cayenne pepper, dried oregano & thyme and half a lemon up the bum. Placed it breast-side down on a bed of sliced onions and left it on a medium setting for six hours; the meat was just falling off the bones when I took it out. Plus, loads of delicious onion-y stock which has been frozen for later use.

The cats have been going mental though Hmm

Broccoli soup made with the stalks left over from lunch on Sunday, remaining peas from same lunch and 3 new potatoes ditto! Served with the rest of the pumpernickel bread.

Potato pancakes made with layered and mashed potatoes, with thyme and olive oil. A bit of cheese. Served with salad and er.. fishmongers. AKA fish fingers and leftover potatoes.

God I LOVE sag paneer.

We had steak and cauliflower cheese. i got a delivery from our local farm shop and the main purpose was to get a cauliflower because i had a craving. Then the delivery man left the cauli in the van! I nearly cried but 15 minutes later bless him he turned up again.

I have committed myself to going to the farm shop, our loical butcher and fishmonger after all this is over. They have been amazing, and although it is more expensive slightly I plan to spend the same amount roughly as at the supermarket but only buy meat and fish from them.

The onion rings were delish, even if I suffered for the night after them!!! I was using up an onion ring batter mix from our last transatlantic trip (which was 2013 I think).

Tonight, DD is in charge of dinner, and has the basic ingredient of mince to work with - I think it's going to be tacos. We're eating a lot of Mexican dishes at the moment - wraps or taco shells, meat or bean mix, salad, cheese, salsa etc all on the table and people help themselves. It's good to use up bits of things too - and to get a mix of veg into people.

Tomorrow, being Friday, will be takeaway night. I think I want Chinese - we had Indian week 1, pizza week 2, thai week 3, fish and chips week 4, and I fancy Chinese this week (if it's still open) or else back to Indian (which I know is still open) before the weather really warms up.

Saturday, I might do a small roast beef I have in the freezer (yellow sticker buy a few weeks before lockdown became apparent - but DD won't eat roasts). Either as a slow roast to pull apart or a proper roast for just DH and I to enjoy date night. Or something with a pack of leek and black pepper sausages....

I suffered from the effects of eating too much onion - the batter mix was absolutely fine! Reading back, it read as if it was the mix....but I normally need a window open after onion rings.

Cheese, mushroom, and spinach pastry parcels...the mushrooms are getting a bit old and sad and there's not enough spinach left to use as a proper serving or major part of a dish so I'm just going to chuck it in!

The pie was worth the effort and the time. It was delicious and met with enthusiasm by all (which doesn’t happen often, so it’s noted when it does).

Tonight is a much less labour intensive affair. Gnocchi & a roasted chilli, tomato, pepper & oregano sauce that I made a month ago in bulk and froze in portions. Plus flatbreads, also out of the freezer. Thank you past me!

Pot roast chicken with roast Mediterranean veg - peppers, shallots, olives, cherry tomatoes, baby potatoes and butternut squash in garlic, herbs and olive oil. With steamed broccoli.

mbosnz it's still only early yet - get something out now and defrost on the counter rather than in the fridge and you should be fine. Although I recommend thinner or flatter or individual items rather than 1 big mass of a lump of something....

Slowcooked chicken pie filling, took out an popped ready roll puff on top, served with creamy mash Grin (Oz time so we have eaten it already) was lovely!
