I love a food thread and normally pick up some new ideas as well Smile

Breakfast, poached eggs on toast. Lots of coffee

Lunch chicken salad & party rings with the dc

Dinner later will be sausage and butter bean stew & a bottle of red for me and dh

Dessert home made strawberry ice cream ( the ice cream maker has turned out to be a great buy)

Yesterday I had a yoghurt for breakfast (a posh strawberry one full fat) and some strawberries and raspberries and a coffee.
For lunch I had Salad, Hummus, Anchovies and a couscous feta salad from aldi which was really good.
Dinner was spicy haddock fish nuggets, rice and salad (we started a Gousto box delivery this week to take the thinking out of midweek meals) I am impressed. I met a friend for coffee and had a couple of cortados (feeling virtuous as I didn't eat cake) and then had 2 pints of Estrella in the evening as a pal who is getting married is in town and messaged for a catch up, would've been rude not to (plus it's recess, so no work for me)

@AwkwardSquad - sorry just spotted your spices advice from Monday - thank you, I’ll do that next time.

I have to say I’m pleasantly surprised with the texture of the muffins - they are moist from the courgette. Texture of baked goods is always an issue for those of us who are gluten free and low carb, as coconut and almond flours can be very heavy.

Shop bought GF cakes , biscuits and scones are always a disappointment . Dry and crumbly and a bloody fortune.

So thank you for inspiring me to try the muffins. Next time it’s courgette fritters I think.

Hi M0RVEN, good to know about moistness of gluten free version. I’ve tried coconut flour in the past and find it quite difficult to work with but the result was good, it was a sort of high protein cake made with lots of eggs, and loads of cinnamon.

L - Longley Farm cottage cheese, carrot and celery sticks; cherries
A surprise samosa from the market (so good!)
D - pasta with peas and fennel pesto, beetroot salad, lettuce

I need to do this again for accountability:

Breakfast- cup of tea, raisin wheats with milk
Lunch - quinoa, tomatoes, halloumi
Snack - latte and rhubarb cake and malteasers.
Dinner - banana, oat, raisin and flax seed smoothie.

B- Porridge with honey, strawberries and raspberries. Coffee.
L - Homemade veg soup with a toasted English muffin.
Through afternoon - half a blueberry muffin, chai latte and cup of tea.
D - Chicken Thai green curry with rice and veggies. Followed by fage full fat yogurt and a drizzle of maple syrup. Also had a herbal tea.

B : carrot, spinach, apple, raspberry & red fruit yoghurt smoothie

D : reheated chicken in white wine sauce with sprouts & a couple of yorkshire puds I found in the back of the freezer. Yum.

Large V&C and 2 glasses of vinho tinto.

Breakfast: one slice of toast, poached egg and smashed avacado
Lunch: grilled chicken, brocolli, hummus and cucumber batons.
Dinner: chilli with tortilla chips. Snacks: jammy dodger. One mocha.

I suspect the sogginess of the grated courgette helps with the high moisture absorption of the coconut flour.

B - Weetabix with blueberries
S: half a banana
L: ham, red onion and cheese omelette, couple spoonfuls of beans (using them up), greek yoghurt with blackberry compote.
Just had a peach
D: will be baked potatoes and salad. I'm having prawn mayonnaise, the others are having beans and cheese
Might do baked plums with vanilla ice cream for pudding.

I'm staaaarving today.

2 digestive biscuits
L - salad with feta, olives, peppers. Balsamic dressing. Another apple.
Mini double caramel magnum
D - falafel, veg and feta couscous, homemade hummus, one tomato/harissa flatbread, salad, yoghurt
Coffee.

Might have a bit of chocolate later. Healthy meals but as usual it's my sugar craving that gets the better of me.
