Yuck! I'd seriously considered getting chickens to be sure of eggs fresh enough to poach. I settled for using a strainer.

I have never understood the so-called reasoning behind vinegar in a poached egg pan. If the white is going to flob about like Miss Haversham's wedding dress it will do it, vinegar or no vinegar, so you're ruining the eggs for nothing!

(I bet the TRAs never have deeply intellectual sophisticated conversations like these. I pity them.)

The best way to poach an egg is either in shashuska or, inspired by that, to drop it into a warmed bowl of a tomatoey soup or baked beans spiced up with smoked paprika and chipotle Tabasco and then microwave to desired set-ness. No need for pans, ramekins, swirling or vinegar.

I've just looked up shashuska and it seems similar to this which I've cooked a few times and is bliddy lovely!
