My feeling/experience is that people who do awful things that go much further beyond the pale than ordinary people would go, are to be handled very carefully, like defusing a bomb.

On the other hand, I think caro is right to stand by her principles and not lose who she is in all this bullying. She believes in forgiveness and turning the other cheek, this value is at her core and in the long run it would be more traumatising to lose those values than to be betrayed by an unstable, manipulative psycho she was kind to.

However, boundaries, boundaries, boundaries. Do not let this person get any closer to yourself or anyone who could be manipulated to get to you caro. If you signpost them - maybe signpost them to someone who has been a chaplain in a prison or something, who knows exactly how to deal with this sort.

I would suggest to try to get help on this Caro. You are a very busy mother and journalist anyway let alone all this stuff. Could you could get someone retired and local from your church contacts who is lets say of a practical nature and strong character? Could you ask them to handle all the deliveries and nonsense for 6 months and give you a break.
