I need to get some SW-friendly snacks for the house so that I don't blow it. Might get some crackerbread and veggie pate, anything to keep me out of biscuit tin!

those asda good for you fries are nice. they are like french fries but less syns.

nappyaddict · 16/05/2008 10:27

Here is my favourite recipe for SW Malteasers Ice Cream:

2 normal sized bags of malteasers, roughly crushed
2 tablespoon muscavado sugar
2 teaspoon vanilla essence
410 ml evaporated milk

1.Pour evaporated milk into a large bowl. Add vanilla extract and sugar. Whisk with hand-held electric beaters until thick and foamy, until mixture is roughly three times original volume.
2.Add Maltesers and stir.
3.Tip mixture into rigid freezer container and freeze until firm. Before serving, remove from freezer for 10 minutes so that ice cream softens slightly.

The muscovado sugar adds flavour as well as sweetness, so use it in preference to white sugar.

Total 30.5 for 8 servings or 4 syns per portion.

also chopped bananas with warmed up vanilla light is nice. or some people use natural yoghurt, vanilla essence and splenda.

frozen toffee mullerlights with banana is nice too. i also like partially defrosted frozen raspberries or mixed fruits with yoghurt or fromage frais. makes a nice alternative to ice cream.

There are some great ideas... if only the lovely weather would come back
Doing ok, still sticking to plan. Trying to plan my menu out for next week.
My official weigh in day is now first thing on a Wednesday morning, which eliminates the twilight zone

nappyaddict · 16/05/2008 10:42

yeah i love cooking!!

Another one is stir 2 x 200g pots of Müllerlight (or other Free) yogurts and 1 x 500g pot natural yoghurt (it's meant to be fromage frais but i find natural yoghurt works better) together, sweeten to taste with artificial sweetener and pop in a freezer-proof tub.
Place in the freezer and lightly whip approximately every 30 minutes to break down any ice crystals that are forming.
Your ice cream should be ready in a couple of hours.
For a deliciously different ice cream flavour, apple pie or strawberry cheesecake varieties of Müllerlight taste great and add only 1 Syn per 200g pot.
Don?t forget ? because all the ingredients are Free, it doesn?t matter how often you lick the spoon!

nappyaddict · 16/05/2008 10:53

btw has anyone used butter buds? it's a butter alternative. you mix 1 teaspoon of granules with 1 tablespoon of water and it's 1/2 syn per tablespoon.

sticktoit · 16/05/2008 11:05

Hi all, hope you're all having a good day - even though weather is pants....

Well I made my first ever quiche last night and was totally prepared for it to be minging but it was amazing!! I made a red day one with loads of veg, ham and used the cottage cheese with chives and onion and a HEa serving of cheese on top. Had it with a HEb of new pots also. I was stuffed!

I am not a cook at all and have made many things that make my DPs face cave in with disgust so was quite chuffed with thy self!

So are we all up for a low syn w.end?? I am defo.... !!

sticktoit · 16/05/2008 11:10

I have got my size 14 trousers back on today which is incentive enough for me to carry on and proof that it is working!

Furball · 16/05/2008 11:28

I too am in size 14's today! - I have a spare wardrobe full of it all, which will be unleashed size 16's deffo going to the charity shop.

Bought a cheapo £15 pair of casual trousers in sainsburys yesterday, They were then reduced down to £7.50 and when I went to the till they were £4.50 - bargain!!

nappyaddict · 16/05/2008 11:37

what's everyone having for lunch?

I am having rice with carrot, onion, garlic and mint. I fried the onion and carrot on a low heat for 10 mins, added the garlic and cooked for a further 3 mins. cooked the rice and added the juice and zest of one lemon to the water. stired the veg into the rice and added some chopped mint.

nappyaddict · 16/05/2008 12:25

Combine 1 1/3 cups stock with turmeric and salt in heavy 2-quart saucepan and bring to boil over high heat. Add rice, reduce heat to low, cover and cook until liquid is absorbed, about 25 minutes. Remove from heat and fluff with fork. Cover and keep warm.

Melt butter in heavy large skillet over low heat. Add onion, cover and cook until softened, about 10 minutes, stirring occasionally. Blend in carrots, increase heat to medium-low and cook uncovered 5 minutes. Add marjoram and oregano and cook 5 minutes, stirring frequently. Stir in vinegar, sugar and cinnamon and cook several minutes to blend flavors. Add 1/2 cup stock and simmer gently until carrots are crisp-tender and liquid is evaporated, about 20 minutes. Stir carrots into rice.

nappyaddict · 16/05/2008 12:27

oops that didn't copy and paste properly. i'll try again.

1 1/3 cups bovril chicken stock
1/8 teaspoon ground turmeric
2/3 cup rice
Frylight
1 medium onion, diced finely
1 pound carrots, diced finely
2 teaspoons fresh marjoram leaves or 1/2 teaspoon dried
1/4 teaspoon dried Italian or Greek oregano
1 tablespoon wine vinegar
Pinch of cinnamon
1/2 cup bovril chicken stock or water
2 teaspoons chopped fresh parsley

Combine 1 1/3 cups stock with turmeric in a saucepan and bring to boil over high heat. Add rice, reduce heat to low, cover and cook until liquid is absorbed, about 25 minutes. Remove from heat and fluff with fork. Cover and keep warm.

Fry onion, cover and cook until softened, about 10 minutes, stirring occasionally. Blend in carrots, increase heat to medium-low and cook uncovered 5 minutes. Add marjoram and oregano and cook 5 minutes, stirring frequently. Stir in vinegar and cinnamon and cook for several minutes to blend flavours. Add 1/2 cup stock and simmer gently until carrots are crisp-tender and liquid is evaporated, for about 20 minutes. Stir carrots into rice. Mix in parsley.

BouncingTurtle · 16/05/2008 12:43

Ooh that sounds nice.
I'm doing some pasta with Kraft fat free Italian dressing, sweetcorn, pickled onions, HEA of cheese and a HEB of ham.

BTW do they still do the Lemon Cheesecake or Apple Pie Muller lights? I haven't seen them in a long time in either Asda or Tesco!

nappyaddict · 16/05/2008 12:46

i've got them from asda but we shop online.

btw i don't suppose you can help me? i made a quiche yesterday and was going to eat the rest today but all the red onion in it has gone green. has it gone off? and if so why when i only made it yesterday? it had eggs, chese, tuna and onion in it. it;s only the onions that have gone green.

BouncingTurtle · 16/05/2008 12:54

I find that red onion does discolour when it has been cooked... if it looked ok yesterday, I'm sure it'll be fine. Wouldn't have thought it would have gone off that quick!

sticktoit · 16/05/2008 12:55

NA - I would say that it is fine - red onions do lose their colour even just after cooking them sometimes. If you only cooked it yesterday and it's been in the fridge I would say it's still good. Does it smell OK?

nappyaddict · 16/05/2008 12:57

smells fine and tastes fine but i got worried cos the onions have gone all grey/green. i knew there'd be a simple explanation!!

BouncingTurtle · 16/05/2008 15:58

Have you eaten it NA? Are you still alive
