Tangarine - it is absolutely piss easy (scooz language). My Morrocan friend taught it to me and it has become a fave of mine. You can do it wihtout the butternut squash and it's just as yummy, or add chicken or lamb if you like.
This recipe serves 4-6
Boil, bake or steam some chunks of peeled butternut squash (doesn't matter how you cook it).
Dice 1 onion and soften in a bit of olive oil in a big saucepan.
Add 1 heaped tablespoon of cumin powder, 1 heaped tablespoon of cinnamon & 1 teaspoon of cumin seeds (sounds like a lot of spice, but the dish relies on this, so don't scrimp). Mix around rapidly, coating the onion in all the spices (don't have the heat too high or the spices will burn and taste bitter). If you were going to add meat, add it now and brown/seal in juices befote the next stage
Add 2 cans of drained chickpeas, 2 cans chopped tomatoes, a big handful of sultanas, the cooked butternut squash, a cinnamon stick and a bay leaf, plus about a cup of water.
Stick the lid on the saucepan, bring to the boil and simmer for about 30 mins (longer if you add meat).
Good with cous cous, rice or just salad, and very low fat.
