Nut cutlets

Tesco ,years ago used to do vegan nut cutlets in a box of 4 ..we had these with roast dinner on a Sunday and as burgers in the week .
Sadly they were discontinued,and I've never found anything similar since

I popped into the ‘nice’ Lidl near where I work today and saw in the freezer, old school ‘vegetable’ burgers and spicy bean burgers in the freezer area, says they are Vegan.

I made @Birdsongsingingagainandagain peanut and vegetable loaf for dinner tonight!
Only I didn't as I used cashew nuts instead of peanuts, thyme and rosemary instead of parsley, and oats instead of breadcrumbs. But it was based on that recipe.
And it was lovely!

I have Sarah Brown cookbooks somewhere. Used them years ago and I remember this recipe.

Funny how we forget our favourites
so I’ll be doing this one myself again soon

Some lovely recipes here - I’ve beenn trying to find the Red Dragon Pie one for ages!

It really is quick and easy. DH put a strip of mixed seeds at the bottom and that was yum.
I might even make it at Christmas, after last year’s exhausting palaver with the three layered nut ring - never again.
