B: overnight oats with soya milk/yogurt, blueberries and seeds
L: beetroot, rose harissa chickpeas
S: Apple, few pieces of Tony's chocoloney
Dinner was cooked by DD15 as a cook along with explorers (we veganised it) - chicken in a creme fraiche and peri peri sauce with pepper, mushroom and courgette. She served it with brown rice and broccoli and it was really tasty

L. Tuno and sweetcorn wrap.
D. Pasta with a tomato and basil sauce. Bread, sunbaked tomatoes and balsamic glaze.

L: cucumber and melon cold soup made by a lovely friend, an amaranth bar I ordered from a Native American bakery which was amazing

L. Another toasted muffin (because they are soooo good) with vg chicken slices, spinach, tomato, houmous and peri peri veganaise.

Morning All! Hope I'm not the only one enjoying sunshine through the windows this morning.

Yesterday was
B: porridge with blueberries, seeds and maple syrup
L: big salad, wholemeal roll with Mediterranean nut roast leftovers from the freezer, Mayo and pesto
D: baked beans on toasted sourdough with reggae sauce and nooch
Lots of snacks - alpro cherry yogurt, chocolate fingers, toasted raisin and cinnamon bagel with naturli and oatly cream cheese, an obscene amount of M&S posh salted nuts

Yesterday was

B: cinnamon and raisin bagel (toasted) with naturli and oatly cream cheese
L: raisin wheats with soya milk
D: M&S nut roast (reduced to clear in the freezer so I grabbed two Grin). With roast potatoes/parsnips/butternut squash, spring greens, broccoli, carrots, peas and gravy. Apple crumble and alpro custard
S: mango, 2 dates, piece of iced apple and sultana tray bake, 4 booja booja truffles

L: beetroot, granary sandwich - naturli, seasoned avocado (slightly mashed) and warmed leftover nut roast from last night
D: dahl, cumin roasted cauliflower and mixed root veg, brown basmati rice and a piece of naan bread. Apple and sultana cake and custard
S: alpro yogurt (blueberry), salt and vinegar snack a jacks

L: confession time, not vegan, my friends have back garden chickens who are spoilt rotten and brought us some eggs so I had a mushroom omelette
S: orange drizzle cake made by DS and JR was delicious
D: fresh pasta made by DH with olive oil and garlic, broccoli, white beans and kimchi

B. Porridge, sultanas, pumpkin seeds, maple syrup, semi dried fig, strawberries, blueberries. Coffee with oat milk.

D. Wicked asparagus and peppercorn ravioli with a home made tomato, basil and balsamic sauce. Spinach and rocket.

S. Strawberries. Decaf coffee with oat milk. Green and black's 70%.

L: beefless stew (freezer portion)
D: ottolenghi jackfruit and chickpea curry in hm roti with soya yogurt and coriander leaves
S: beetroot

S. Genius berry breakfast bar thing.
Strawberries.

L. English muffin, crunchy peanut butter, plum jam.

S. Handful Tortilla chips and reggae reggae sauce.

D. Sausage (tesco cumberland), red cabbage, beetroot, potato and onion casserole. So warming on this cold day.

S. Green and blacks 70%.

(Trying hard not to tuck into oatcakes and pate and kimchi - think the cold is making me want to eat EVERYTHING)

@Breathmiller ooh I love the sound of your casserole! I wouldn't have thought to put either red cabbage or beetroot in a casserole but love both. Can I ask what else you put into it? Red wine? Red wine vinegar?

Well, it was a bit of a fridge hot pot and that's what I had in.
So...

Sauted off 2 red and one brown onion and half a red cabbage sliced finely and one peeled apple cut into small chunks.

Stock made with ...
Veg stock, tomato puree, vegemite. Fresh thyme and bay leaves. Add to well cooked onion and cabbage mixture with apple juice and cook down more.

Parboiled potatoes cut into quarters.
Ready made beetroot cut into quarters.
Sausages cooked and cut up.

Add all together into casserole dish, cover and chuck in oven.

We had it in bowls with french mustard.

Right I’m taking my own eating back In hand tomorrow, killing me to see food go to waste

L: veg and pasta soup made by my lovely cleaner but mega salty so threw it away
S: cashews, fruit bar thing, some of DS’s pasta pesto
D: last of the curry a friend brought over with roast sweet potato and green beans

And a glass of champagne because DH has accepted a fully remote job that will allow us to return to the U.K.....

Hello! I'm place marking for inspiration, I'm in a meal rut 🙈 DH and I are bored of our go to meals... Toddler doesn't really care either way Grin
We're a family of 4, we're veggie to vegan, mostly vegan as we have family meals and daughter has a dairy allergy. Also soya... I miss crispy tofu Sad

Welcome Eileen - family meals are difficult. On weekdays I cook separately for DD but I feel like meals all of us will eat are very repetitive.

I'm back on a WFPB mission so yesterday was

B: high fibre bran, unsweetened koko milk, rhubarb
L: lettuce, tomato, sunflower seeds, asparagus, and yoghurt / tahini dressing
D: Dr Greger's BBQ tempeh with spring greens and roast sweet potato

Today:
B: porridge with almond butter, blueberries and banana
L: leftover greens with cannellini beans, asparagus, apple and walnut, and a yoghurt / ACV / mustard dressing
D: will be FOK potato and artichoke salad
