L: leftover aubergine in harissa as part of a salad
D: sweet potato, aubergine, potato, chickpeas and spinach tagine with olives and cous cous
S: an orange, some pistachios, trail mix, orange cake

And today!
L: white bean and rosemary soup with mushrooms and a slice of bread and butter
S: handful of cashews
D: I made vegan haggis for the first time! Mashed potato and fried cabbage and vegan whisky cream sauce - also made for the first time

Am a bit sad though because I usually host Burns for 20people with 3 courses and whisky tasting and a Limerick-off and a singalong round the piano. Think I’ll just put on Trainspotting....

Your dinner sounds amazing @Kobanidaughters. I love the sound of the soup especially and well done with the haggis - I always just get mine from Mcsweens! Shame you didn't get to share it with 20 people. Does someone usually do the ode to a haggis and all?

I'm in Glasgow and we had pasta! Somehow we forgot about Burns night, every day just feels the same at the moment.

Posting again today as excited about having pudding tonight! I plan my food in advance which is dull, but required to be able to semi diet and still have treats, soooooo:

B: protein shake
L: avocado on seedy toast
S: oat so simple with frozen berries and Unsweetened soya milk
D: sausage pasta with Richmond sausages, mushrooms and spinach in tomato sauce with bean pasta (game changer) & Aldi caramel melt in the middle pudding (hope its nice!)

Thanks @AlmightyBob yes we do the Ode and toasts to the lassies and laddies! It’s quite the shin dig so am sad to miss it this year. I’m actually part welsh, it’s DH who is a Scot and my brother bemoans the fact I don’t put the same effort in St David’s Day or Dylan Thomas’ birthday!

@DialsMavis your dinner is bringing back fond memories of my absolute favourite 3am in from clubbing and needing something to soak up the alcohol sausage pasta my housemates and I used to make!

Your Burns night sounds amazing. I love Burns night. My grandad used to organise the big town's police burns night and i helped him once learn the whole ode to the haggis once. Then we would have thee best ceilidh amd and he would burl me round and round. A famous Scottish singer came once who knew him from their younger days and when she got up to sing on the stage, she called him up to join her. He had a wonderful voice. Lovely memories of my dear grandad.

B. 2 Dates (i got a box from tesco with 2 different kinds, they were both delicious ) coffee and oat milk. Slice of toast and half an avocado with lemon and pumpkin seeds.

L. Brocolli soup. Leftover haggis fried.

D. Sausage and spinach sandwich. A couple more dates.

I'm also juicing so had a glass each of ginger, celery and beetroot and a shot of turmeric juice eek!
L: peri humous and veg wrap
D: my fave arabiatta penne with salad and garlic bread
And WINE! Grin yum.

I have followed these threads for inspiration for ages. Time to contribute.

Yesterday
L mixed salad with chickpeas
D tomato broccoli pasta bake
S some leftover crisps and tomato salsa

Today
L 2 slices wholemeal toast with flora and marmite with a half tin of warmed up tomatoes, one of my favourites
D vegan cottage pie with cauliflower, green beans and peas
S none, but I did have seconds of dinner!

I cook nearly everything from scratch, luckily I have 2 daughters that are strict veggie so more than happy to eat vegan.

Favourite cookbook ATM is East by Meera Sodha, reliably fantastic. Also having fun with Vegan JapanEasy by Tim Anderson

I've got Japaneasy @Tr1skel1on! I need to make more things from it, I've only done a few things. Teriyaki carrots was a winner. I really like Tim's writing.

those juices sound very healthy and delicious @shittestxmasever . I've never had turmeric in a drink before, apart from in lattes (which I love)

Oh nice *@ilovemydogandmrobama2* I’m in Mar Vista! Are you American or british? How old were you when you moved to the U.K. (sorry total thread derail but am constantly trying to get us home so always interested if people grew up here and moved back in childhood)
Am American. Moved here about 20 years ago mostly for work, but now all of the DCs are in school here so think we've passed the, 'window,' where it didn't make a difference. DD1 has GCSEs next year or whatever is the plan in these Covid times Hmm

Can I say the vegan feta from Lidl is amazing

Hello and welcome to the newbies 

Loving everybody's burns stories. Have never done one myself, but am sorely tempted for next year now 

Yesterday was
B: date/coffee/pb/soya milk/banana smoothie
L: leftover veg stew and dumplings
D: celeriac risotto with lemon/caper/sage oil (Meera sodha in the guardian)
S: pear, cherry pie and custard (DD14 made it as a zoom cook along with explorers)

Today
B: oats with soya milk/yogurt, blueberries and seeds
L: fridge soup, sandwich (wholemeal bread, squeaky bean pastrami slices and horseradish/mustard relish)
D: dirty vegan chickpea and jackfruit goulash with crusty bread and naturli (thanks for the recommendation @AlmightyBob, it was good Smile)

Apparently turmeric juice is soooooo good for you BUT difficult for the body to digest/absorb so After some research I started mixing it with a little hemp oil and some cracked black pepper on top then take it like a shot and imagine I'm having a tequila haha!

Welcome newbies! Love growing our little community

I have Vegan Japaneasy too and it’s brilliant, every recipe so far has been great - the curry roux by the way makes tons, we froze ours and in total have made 8-10ish individual meals (a few nights both of us then a few lunches for DH too) - I always make my own dashi now

Today:
L: leftover haggis and cabbage
S: cashews and a date
D: ended up getting take away pizza as the local pizzeria was doing a fundraiser for the school. Haven’t had theirs in a while and they’ve started making their own cashew mozarella which was delicious! Then had a bowl of frozen mango

Dinners for the foreseeable are going to be some form of grains-greens-topping bowl because they're easy and work is absolutely insane at the moment. I have found a really nice sauce though: a cup of unsweetened soy yoghurt, 2 tbsp tahini, 1 tsp mint sauce, 1 clove garlic crushed in, mix and thin with water to desired consistency. Really tasty and with social distancing, no worries about raw garlic breath the next day Grin

That tahini sauce sounds great @ElfAndSafetyInspector . I'm a sucker for tahini sauces.

Glad you liked the goulash, @PartTimeDomesticGoddess ! It's a rare universally popular meal in our house.

B: Tomatoes on sourdough toast
L: mug soup, last of the mushroom and spinach orzo
D: chermoula aubergines with mejadra and a dill and cucumber (soy) yoghurt sauce. We all really liked the mejadra and the yoghurt sauce, the aubergines were less successful but will be revisited. I think they could have been roasted for longer but on a lower temperature.

Other: glass chocolate deluxe Oatly, glass red wine, three satsumas. We have some really nice satsumas at the moment, so sweet and zingy.

What's in your pizza kits @shittestxmasever ? Hope they are delicious.

It's a ball of fresh dough, tomato sauce, basil and vegan mozzarella.
I added PLENTY of red onion, some slivers of garlic and chilli too. Deeeelish! So so good

Oh i love medjara, my friend makes it perfectly. I might make it at the weekend. I like the idea of it with aubergines.

B. Coffee, dates, cashews, a fig pumpkin seeds.
L. Pea and mint soup.
S. Tesco FF tiffin bites
D. A creamy tomato pasta with aubergine, mushrooms, vivera bacon pieces, black olives and peas. Topped with griddled oregano courgette slices.

Loads of lovely sounding food! Haven't had mejadra, but that's going on the list. Loving the sound of bowl food/tahini sauce, and the turmeric shot image is brilliant 😂

B: date/coffee/pb/soya milk/banana smoothie
L: butternut carbonara leftovers from the freezer, cherry tomatoes, cucumber
D: cheats toad in the hole, roast butternut, peas, carrots, sprouts, broccoli and gravy
S: pear, 2 tiffin bites

I recommend the cheats toad in the hole. It's from the speedy bosh book and is just a sheet of puff pastry with sausages of your choice placed on it. Score around the long sides of each sausage and brush with seasoned milk (they also add curry powder but I don't bother). Bake for 15-20 mins. Useful quick and easy family dinner

Love both tahini and mejadra (never made it with aubergine but can imagine it goes really well)

B: half a slice of bread and jam
L: beans and cheese on toast and then another slice of bread with marmite
S: pistachios
D: instapot bean and mushroom chilli and brown rice

That pizza looks amazing @shittestxmasever ! I love the simple toppings. How was the vegan mozz? I sometimes make a cashew-based mozz substitute for my pizza, it doesn't really taste the same but it does go lovely and gooey.

The mejadra was from Ottolenghi 'Jerusalem', @PartTimeDomesticGoddess though there are loads of recipes online:

I still haven't found any replacement cheeses that really satisfy my cheese urges like the real deal but it was def passable and made a great pizza Grin
I think actually cheese is the thing I miss the most. There are great things to eat in replacement of meats and milks but CHEESE? Nope.

Has anyone tried the fauxmagerie on Instagram? I'm getting tired of trying cheese replacements and being disappointed

A couple of people here got cheeseboards from them over Christmas, @shittestxmasever . The sorts of cheese that they sell tend to be closer to the real deal then the likes of Violife and Sheese, because they are produced using similar methods to dairy cheese, but using nuts and other bases instead of milk.

Of the ones I've tried, I love Nutcrafter cheeses the best. However they are only a small producer and they are usually sold out! But when I asked about this here, people recommended Miner Threat by I Am Nut OK and Shamembert by Honestly Tasty. (you can get them both on Fauxmagerie I think)

I have tried making cultured cashew cheeses at home using acidophilus tablets from H&B and have had mixed results. It's quite straightforward and fun to make cultured cream cheese though and I'd recommend that, if you have a good blender.

But basically I hear ya, it's the only thing I do sometimes miss. I used to be a total cheese monster. But largely I feel I've come to terms with it (!) which I never thought would happen!
