I'm a fan of silken tofu to make sauces - whizzed up with 1-2 tbsp each of red wine vinegar and lemon juice, it makes an excellent sour cream substitute. You can also make a mayo sub with it although at the moment I have a Hellmanns addiction. Really ought to revert to the silken tofu version which is far healthier!

Thanks to you lot, I have spent a week - yes, a week - eating Bosh Sri Lankan curry. I can't remember who first posted it but it was so popular we had it for dinner 5 nights out of the last 6 Grin

Today:
B: toast and marmite
L: sandwich with hummus, beetroot and cucumber
D: rice bowl with sweet potato, greens, smoked tofu, sweetcorn and tahini sauce

So I use the tofoo smoked tofu as it's the only smoked tofu in my local shops
Does anyone have any recommendations for smoked tofu I'm wondering if there are better out there as I think the tofoo one could be smokier?

I like the Tofoo one. The only other one I've tried was from my local whole-foods money-sink emporium, which was phenomenally expensive and just tasted of smoke flavouring - I can't remember what the brand name was but on that description I don't suppose anyone is clamouring for it Grin

I love that toofoo one - nothing like it here! We have all sorts of other marinaded tofus etc but that stuff is amazing

Yes, the Sunny one. I made it to try, we liked it, so I made a batch of it intending half for the freezer and we just kept eating it instead of freezing any!

D: red pepper and olive hash (HFW Much More Veg) with tofu

Might have a brownie if I get round to making them later

@PartTimeDomesticGoddess those vegan cornettos are lush aren't they. Breakfast oats with chocolate alpro milk, lunch sourdough with avocado and lime, dinner home made Minestrone soup v tasty and filling. Snacks cornett, kiwi fruit, 2 digestives.
Still snowing on skye today. Hope everyone has a tasty weekend x

Cold here (especially in the wind) but not nearly cold enough for snow. Big beefless stew in the oven for dinner

L: GRT minestrone, 2 slices of toast with naturli
D: happy pear bean and stroganoff pie with purple sprouting broccoli
S: dates, cornetto, salted cashews

@part I also had the grt Minestrone delicious and so filling. I adapted my favourite nigellas Damp choc cake to be vegan. I put in aquafaba and it is lush lovely and damp even better than with eggs. Also made the vegan Cinnamon buns delicious too. Not very healthy but very tasty xx

@Coconut80 it's the pine nuts and drizzle of chilli oil that makes the minestrone sooo delicious I think. Will have a look at the Nigella cake, am sure I've made it as an omni and it was divine. Which cinnamon bun recipe did you use?
@KobaniDaughters love the sound of your herby tahini dip, especially with flatbread

L: tofu scramble on naturli granary toast, spinach with cherry tomatoes and mushrooms roasted in chilli oil
D: beefless stew and dumplings with purple sprouting broccoli
S: baba ganoush with tortilla chips, stewed rhubarb with seeds, fry's chocolate cream, 6 booja booja honeycomb truffles

B: 2 Pret bake at home croissants, mug of posh hot chocolate to dip them in
D: potato baija and tomato piment from the Mauritian place in town (think samosas and pakoras). Rice, broccoli and chickpea and jackfruit curry. Small salad of cucumber and tomato
S: big bowl of stewed rhubarb with seeds and flaked almonds, Tony's chocoloney (dark with almonds and sea salt)

@PartTimeDomesticGoddess have to admit both shop bought I’m afraid!

B: cashew yoghurt
L: cooked for my pod friends as I’m having hip surgery on Tuesday so won’t be cooking for a while. Did meatballs and spaghetti with a caprese style salad and garlic bread and made tiramisu - inspired by you all a few weeks ago!
D/S: brownie and an orange

Have been cooking up a batch cooking storm ahead of being utterly laid up. DH can cope fine but good to have some stuff in the freezer he can pull out when he needs too

D: black bean enchiladas, Mexican Sweetcorn, avocado and sour cream made with silken tofu (similar to the one mentioned by @KarmaViolet recently - hands down the best sour cream sub I've tried yet)
