It's sugar cravings Coco Grin They take will power to overcome. I'd wait till after the holidays to even try!! I get back my pre sugar taste buds by having as my first drink of the day a large freshly squeezed lemon juice in water, think of it like a medicine!!

Hi, I hope you don't mind me being here and asking, I'm not vegan but I'm intolerant to eggs and really miss scrambled egg.
Does anyone have a good recipe please?

Coconut80 · 03/04/2021 23:07

Lemon juice sounds good. As soon as I have something sugary it just triggers more cravings for it. I find I use the sugar to soothe me mentally so need a better way of coping x

IndigoJasmine · 04/04/2021 06:00

My tofu scrambled ‘egg’ was silken tofu whisked with garlic powder, tumeric, black pepper and most importantly kala namak which is a ‘black’ (actually pale lilac!) mineral salt from northern India, it is sulphurous so gives that eggy flavour. I made a batch the other day and kept half in the fridge and then just quickly cooked it yesterday morning, I think it tasted even better for having been made 24 hours before.
I made a thread here about getting a more buttery flavour to it www.mumsnet.com/Talk/vegan/4208735-What-to-add-for-butteriness?msgid=106129507#106129507
I’m going to experiment with adding cashew and also mustard and nutritional yeast to it. I would have used onion powder too if I had any. But think I’ll stick with the method of whisking all the seasonings into the tofu first, ideally allowing flavours to develop for some time and then cooking, as that seemed to work really well. And making ahead the night before always makes me feel organised :-) tofu takes on the flavour of whatever you marinade it with so making ahead seems like a no brainier when you think about it.

I like to start my day with lemon water too, I stopped for a while as read the acid was really bad for teeth but now I do if I have enough time in the morning to wait a while before brushing (at least an hour) also drink it cold & not too strong & drink plain water straight after. Also use a straw :-)

KobaniDaughters · 04/04/2021 06:34

@IndigoJasmine interesting I’ve not tried it with silken tofu, always just made a tofu scramble with the usual stuff - will
Give that a go

@PartTimeDomesticGoddess If you like tofu scramble, try tofu fried rice www.cauldronfoods.co.uk/recipes/scrambled-tofu-fried-rice

IndigoJasmine · 05/04/2021 18:22

I find silken tofu pretty useless for most things i want tofu for (being cooked in chunks or slices as a meat sub) but whisked as a dairy/egg sub it works brilliantly! See also tofu chocolate mousse :-).

I want to use the same mixture liquidised a bit and try and make an omelette at some point. Tofmelette?

Kintsugi16 · 05/04/2021 19:19

No silken tofu here, I’m not keen.

DH is making Paella tonight with seitan he made himself.
B: sourdough tomato mushroom avocado.
L: picked at lots of random stuff

Shortiemyboo · 05/04/2021 19:23

Vegan sausage sandwich brown sauce
Snitzel with lettuce, tomatoes, pickles on a baguette
Vegetable vegan lasagne and salad

KobaniDaughters · 05/04/2021 20:29

I would also say you have to have silken tofu in miso soup

We were lucky enough to go to Japan in 2019 and the best meal we had was at a tofu house where we had I think 5/6 completely unique tofu dishes - all silken - which made me fall for its charms

OP posts:
KobaniDaughters · 06/04/2021 03:37

L: bits and pieces really, sugar snap peas, last of the bitchin sauce, cucumber, tzatziki, an orange, some olives
D: oh my word made the most delicious dinner in part inspired by all the roasting tin meals: garlic roasted cabbage steaks (in a lot of v butter) with roast potatoes and white beans and garlic topped with parsley, capers, spring onions and lemon zest.

OP posts:
PartTimeDomesticGoddess · 06/04/2021 07:29

@Kintsugi16 I can totally see how it isn't for everyone but I already found it to make a great egg sub. @IndigoJasmine I also do a quiche using silken tofu so see no reason why you couldn't extend that to an omelette too

Yesterday was
B: tofu scramble with sourdough toast, spinach, roasted cherry tomatoes and mushrooms
L: sandwich with nut roast, cranberry sauce and Mayo. Cornetto
D: jacket potato and cowboy beans. Cornetto

PartTimeDomesticGoddess · 06/04/2021 22:02

B: Monday smoothie (effectively a Monday after the bank holiday)
L: GRT Dahl and small piece of naan bread
S: Apple
D: harissa roasted cauliflower, red onion, yellow pepper and chickpeas with a whole roasted aubergine, served with harissa yogurt and sprinkled with sesame seeds

KobaniDaughters · 06/04/2021 22:08
