Evening!

FD yesterday
L: small portion chickpea and tomato curry
D: Sri Lankan curry from healthy Bosh with cashews

Today
B: orange, trek peanut bar
L: pear, 2 small random (different) veg stew leftover pots from the freezer
S: Apple
D: big salad (lambs lettuce, lettuce, tomatoes, cucumber, beetroot and artichoke hearts), small handful of frozen wedges, plant kitchen coleslaw, plant burger in a bun with lettuce, burger sauce and Mexicana

@AlmightyBob kimchi greens sound good, I'll take a look at that. Where do you get your kimchi? I really like Eaten Alive (need to order some more). Really hope you like the tiramisu, especially with all the effort for the chocolate!
And agree, what a wasted opportunity to showcase some amazing vegan cooking

Agreed @AlmightyBob your DD’s dish sounds amazing, I love kimchi!

Today I met up with a friend for lunch and had a shaved Brussel sprout, avocado, fermented cabbage, coconut bacon salad and Smokey mushroom bourguignon with polenta which was lush and very filling

Cashews to nibble on because I’m greedy and the leek and lentil bake again because it is the food of the gods

I am making that bake! I also ordered a new cookbook, East by Meera Sohda - I think it's been mentioned in this thread a couple of times and I've been wanting it for a while.

@PartTimeDomesticGoddess it was a bit of a production actually - had to buy the kimchi online, because the only stuff I could find in the supermarket wasn't vegan. The brand I bought is called 'Yumchi', and I don't know how authentic it is, never having had kimchi before. There isn't much cabbage in it, which was disappointing, but it was tasty. I'll see if I can find the brand you mention.

L: homemade butternut squash soup with loads of pearl barley.

@Kintsugi16 there’s a cashew based sour cream I can get here in wholefoods and I use that. Sorry am not much use because I don’t know what’s available in the UK

@Kintsugi16 I used oatly creme fraiche. I agree with @AlmightyBob that it has an aftertaste that I don't like, but I'm fine with it mixed in something. I wonder if that's why I didn't find it 'wet' enough as the oatly is very thick. I think I'll try yogurt next time and see how that is

Thanks @PartTimeDomesticGoddess I may try yoghurt or make my own cashew creme fraiche. DH thinks the oatly creams give him indigestion so we avoid them. He’s ok with the milk.

Hello, dh has been messing with the techs so my laptop has been 'down' for a while. Funny how I miss it!

Snacks oatcakes and dates. DH been over to the city, Inverness and has purchased me 3 noses of fancy dates whoop. Day 12 dechox longest off choc in my life.

Just swinging by to say that the tiramisu is made and in the fridge for tomorrow @PartTimeDomesticGoddess ! I have tasted all the elements and I think it's going to be immense. The white chocolate ganache works so well. I took your advice and upped the kahlua quotient. I thought the sponge fingers wouldn't hold when I soaked them but they did. It's made me feel quite emotional - I thought tiramisu was a thing of the past!

It's my birthday tomorrow so the tiramisu is a special present to myself (er, and anyone else who wants to try it too). Our friend who has joined households with us is coming round for dinner, it's his birthday in a couple of days, so I'm making a big feast. I'm making samosas for the first time, been watching a lot of Youtube videos today. Also chana dal, an old favourite mushroom and coriander curry from my Madhur Jaffrey book, a baby aubergine curry and a jackfruit sabzi from Zaika (Romy Gill) - neither tried before. What else. Raita, and I've bought some good naans (Clay Oven, heavily recommend if you can get them - they're the best shop bought ones I have had) and poppadoms and couple different chutneys. So I'll be cooking all day probably, but there's bugger all else to do! And it's my happy place.

@ppeatfruit it's funny how dates cluster like that, isn't it?

Yesterday was
B: oats with soya milk/yogurt, chia seeds, raspberries and flaked almonds
L: Indian spiced tomato and lentil soup, pear, blood orange
D: veg gyoza and 1 veg bao bun (both itsu) with wok greens and sort of bang bang cauliflower (this recipe which was more like breaded cauliflower with a spicy Mayo sauce, and breadcrumb mix doesn't stick with just milk so I quickly switched to aqua faba! Was nice, but not bang bang cauliflower, will try a different recipe next time. Does anyone have a recommendation? https://www.bbc.co.uk/food/recipes/bangbanggcauliflower38036)

Yes Part Time and dh just remembered that his cousin's ds's b\day was yesterday it's uncanny! Is there a Bank Holiday approx. 9 months ago I wonder? Grin Not being a great fan of HOT food ( I love ginger in my curries but not chilli) I can't help with a better recipe for your cauliflour.

How was your birthday feast @AlmightyBob?

Yesterday was
B: pineapple, dates, 2 small slices of granary toast loaded with naturli and marmite
L: the roasted aubergine recipe below (subbing vegan butter/yogurt obvs) which was divine, eaten with a large salad of lambs lettuce, cherry tomatoes, cucumber, beetroot and artichoke hearts. I think you could miss the butter out and mix the harissa paste with the yogurt if you wanted to reduce the calories and it would still feel lovely and rich, although I used one of the graffiti aubergines I bought last weekend so they may be sweeter than a regular one
D: birds eye fake chicken pie with roast parsnips/swede/butternut/cauliflower/ shallot, peas, broccoli and gravy

Plus quite a few snacks - alpro cherry yogurt, half an orange, pistachios, 2 small bowls of Rice Krispies with soya milk and sugar, stewed rhubarb (which I bought from the local farm and it was lovely, I'd forgotten how much I like stewed rhubarb!)

oh I keep forgetting to tell everyone on here how I've found out another way to make a nice rich textured "cheesy' sauce for Mac n Cheese. I made a roux (white sauce) using olive oil,oat milk, yeast flakes with quinoa flour, which really helped the texture that can sometimes be the problem.

Hello everyone! Thanks for birthday wishes.

@Coconut80 I did manage to take a picture of the samosa because I was so proud of them! But then everyone came to the table and I forgot about pictures. The samosa are pretty wonky but you can see an improvement from the first to the last I think. They were so good, I'll post the recipe and method if anyone is interested (from Zaika).

The baby aubergine masala was probably my favourite of the curries. The aubergines are fried nearly whole, and then cooked in a creamy tomato and coconut sauce, with onion, green chillis, various spices and loads of chopped dill. It's from Zaika as well - I would really recommend that book to anyone who loves Indian food.

@PartTimeDomesticGoddess the tiramisu went down well with everyone. Like you, I wish I'd soaked the sponge fingers for longer, I'll be braver next time. But otherwise it was gorgeous and it's a recipe I'll use again and again - thank you.

Re cauliflower - I've never tried bang bang cauliflower so no help there! But I do have a suggestion for breading things. I dip the veg in cornflour before the milk, that makes an instantly sticky paste that holds breadcrumbs on really well, in case you don't have aquafaba one day.

Today:

Breakfast: Leftover tiramisu (breakfast of gods)
