I rate Fearne Cotton's Happy Vegan recipe book for quick and easy dishes. I made the broccoli katsu curry tonight and DH said it tasted like takeaway. It's healthy too, which is a bonus.

Fail of the day was attempting to feed the children shop bought vegan pizza, which they refused to eat. Has anyone had any success with pizza?

@KobaniDaughters I recently bought an air fryer. I've done chips so far, and tofu tonight. I think it's ok, but wouldn't rave about it so far. Haven't yet decided if that's because of the air fryer or if I haven't got the hang of it. It takes up a lot of work top, but that probably isn't an issue for you in the US
@Coconut80 I recently discovered peanut butter powder. I don't remember where I bought mine from, but you can get it from Amazon or Holland and Barrett online amongst other places. Swapping that out for the sunpat that I usually use would reduce the calorie count by about 100 I reckon. I often have about 400 calories for breakfast, or I'm hungry before lunch (depending on how late I eat it). How many calories are you aiming for with your breakfast smoothie? I used to do a berry oatmeal one that I'll dig out for you. And the navy kitchenaid sounds lush!! The only kitchenaid appliance that I have is our kettle, but I love it.

@AlmightyBob it's oldest DDs birthday next weekend and I have a tiramisu recipe that I'm going to try as it's always been one of her favourites. I'll report fully of course.
@Kintsugi16 that Dahl looks lovely. I'm a fan of Anna Jones thanks to the Saturday guardian and her new book which is out soon looks great, I think it promises a vegan option for every recipe.
And the legume soup is definitely on my list...

Yesterday was
B: porridge with blueberries and seeds (first time doing it at work for ages and I forgot to take golden syrup with me!)
L: green soup (same as Tuesday) with a couple of large matzo crackers
D: dirty vegan chickpea curry with rice and HM chapatis
S: dates, Apple slices with peanut butter

Today
B: date/coffee/peanut butter/banana/soya milk smoothie
L: veg and bean stew with dumplings
S: a Jammie dodger
Dinner was Chinese themed for Chinese New Year. LM fuck pancakes, sainsburys spring roll, rice, wok fried tenderstem and green beans, air fried tofu and burnt garlic black bean sauce with stir fried green pepper and broccoli. Followed by a couple of fortune cookies

Totally addicted to putting my cashew cream in pretty much every hot drink now, and have been working with an author in Japan all week (so my 4-11+pm) and so before I begin I’ve been having a mocha from half coffee, cacao powder, a little maple syrup and cashew cream, such a treat!

L: roast cauliflower, brussel sprouts and chickpeas with lemon tahini sauce (used the air fryer, I think I just have to get used to it)
D: veg and red lentil soup (unfortunately it’s a bit insipid so nobody else will eat it but I hate waste so have portioned it into the freezer for myself to have)
S: a couple of sweets and aforementioned mocha

Cracker I remembered an easy mac n' 'cheese' recipe (you could make the base at the weekend and freeze then put the topping on after it's defrosted before you bake or grill it ).
Recipe: (depending on your need) Use a tin of white beans, which you blend with half the liquid or more depending on the texture of your 'sauce' , garlic and the herbs you like, tbsp. of olive oil and salt or nooch, or marmite. Meanwhile undercook 2 cups of macaroni or any medium sized pasta ( I used pea or rice pasta). After draining . mix with the beans. Put in an oven proof dish and put a topping made with breadcrumbs and nooch (yeast flakes) and olive oil. To crunch it up.

B. grapefuit and figs, almond milk cappuccino.
L. 2 and half a pumpercickel and pnut butter with endive,onion,raw brussels dressed salad.
S. White beans, pasta, and nooch with a herbal dressing.

B. Oatly Greek oatgurt with granola, blueberries, pumpkin seeds and nuts, apple with a squirt of Sweet Freedom chocolate sauce.

L. I made a carrot and walnut cake and had some of that with a banana. It was amazing. Bit of a vegan frozen pizza which was horrible.

D. Toasted olive bread with flora light and marmite.

Sounds good Kobani do you make a 'pancake' with the veg or is it like a stir fry?

Oh does anyone here make oat milk? Our stash of almond/oat milk is about to run out !!!! With Pancake Day coming i'm getting desperate!!

@ppeatfruit I really like the sound of that mac and cheese. I have had no success with veganising this family favourite so far - but your version looks promising. I'm not after something that precisely replicates dairy mac and cheese because that's impossible - but something hearty and comforting that is true to the spirit of it.

@KobaniDaughters that mocha sounds delicious! I made up a batch of cashew cheese yesterday and have frozen it in portions.

@PartTimeDomesticGoddess looking forward to hearing about your tiramisu!

@BentonWesley do you rate the Oatgurt? I'm not fond of their creme fraiche, there's some sort of aftertaste I can't get on with. But I do quite like the cream alternative.

@Sendmetobarbados I don't know how helpful this will be - I make pizza every Saturday. I'm the only vegan in our house though, everyone else is veggie, and whilst they mostly eat vegan with me in the week I don't feel I can take pizza away from them. Veganising my own pizza has been a bit of a journey. Along the way I found out that I hate most supermarket vegan pizza cheeses. I do quite like Mozzarisella - It's the best widely available alternative I think. Otherwise you can make a passable melty vaguely cheesy substance at home from cashews, nooch, miso, and tapioca flour, recipe here: melty stretchy gooey vegan mozarella .

Mostly these days I do away with cheese altogether. If you get the other toppings right, it does work I think, but it took me a while to get there. And for kids who might be deeply suspicious of things like roasted aubergine or griddled artichoke, I'm sure t'd be a whole different ballgame.

Otherwise, for ready made pizza, I always think the White Rabbit ones look nice but haven't tried them. £££ though. I have tried the Pizza Express one - I did really like that.

Yesterday:
B: sourdough toast, hummus, tomatoes
L: legume soup (that Ottolenghi recipe gives at least 12 bowls worth! Truly is the soup that keeps on giving)
D:Pizza night, I tried the white base again (with the cashew sauce thickened with a roux). Spinach, garlic mushrooms, red onions, grilled artichokes on top. Sprinkling of nooch when I took it out the oven.
Snacks: my daughter made vegan rock cakes! They were very good. One of those. A bowl of salt and vinegar peanuts, and half a bottle of Malbec, which I drank whilst dancing to 90s house music in the kitchen making the pizzas.

Ref. Vegan tiramisu , your friend is medium or soft tofu. Blended with sweetener. or normal icing sugar It's impossible very hard to tell it from normal double cream, Then just soak sponge fingers (make your own or not) in strong sweetened instant coffee place them in a layer, with the 'cream' and then grate vegan choc. or sieve cocoa on top.

Planet Organic sells a lovely dessert, a bit like a trifle in a small pot with tofu 'cream'.

Almighty Tofu yoghurt hung up in a muslin cloth over a bowl for a night and the next day mashed with herbs, garlic etc. makes a nice cream cheese.

@KobaniDaughters that Kung Pao recipe from vegan richa looks great. I'll have to wait until DH is back to 'normal' though. He's ok, but not yet back at work and rather than lose his sense of taste or smell (neither of which were very sensitive before) his tastes have changed, especially for chilli. The curry we had Thursday night was eaten by me and the DDs but was too hot for him to eat more than a mouthful. In spite of DD14 getting quite competitive about her increasing chilli tolerance, he's usually the one who can handle the hottest out of the 4 of us
I'm also having pizza tonight! @Sendmetobarbados I usually make my own as it's really straightforward (Bosh recipe but with a bit less water than they say). But if you're near an Asda, they do frozen flatbread pizzas which I thought were really nice. They do a tomato and pesto and one with veggies on, neither has any vegan cheese. I thought there was enough topping to eat as it came or customise. I've also been surprised at how tasty it is without cheese at all and enjoy mine without. I think @KobaniDaughters also had a falafel one recently (goodfellas maybe?) and reported that it was pretty good
@Coconut80 I looked at my smoothie recipe and that's also in excess of 300 calories, so it depends what calorie count you're looking for. Good luck with the weight loss, I think it's hard to be in the zone when the weather is really cold

Yesterday's should start with the brandy and rose creams that I ate on Friday after I posted. Then it was

L: Indian spiced tomato and lentil soup and a greggs style sausage roll (brand was no porkies)
D: mushroom and chestnut roast (Sainsbury's, from the freezer so it was one of my Christmas Plan Bs) with roast potatoes/parsnips/butternut squash, tenderstem broccoli, carrots and gravy
S: dark chocolate fingers, bbq lentil chips

Thanks for the cheese tip @ppeatfruit . I have never used tofu to make cream cheese before, be interesting to have a go. I have made cream cheese with blended cashews and acidophlius culture (from an H&B capsule) - that was pretty good. Not instant - you have to leave it 24-48 hours - but it had the tang going on. After it's cultured you can flavour it with anything you like, I stirred some dill through mine.

Yesterday:
B: Moving Mountains sausage burger in toasted muffin with ketchup
L: bowl of legume soup
D: husband made a recipe he found for veggie 'kievs' - made out of green lentil, potato, nut and onion mixture with herby garlic butter in the middle. They were quite nice. We had them with roasted portobellos, carrots, brocolli.

Tesco Wicked pannacotta is delicious. It doesn’t set like a pannacotta but it tastes really good. Would recommend. The pasta was ok but nothing special. What are those Moving Mountains sausages like? I’ve seen them but I haven’t given them a go.

DH did all the cooking yesterday

L: falafel, hummus, salad and sriracha may wrap
D: Pieminster Kevin, with mash veg and gravy.

We also had pink G&T aperitif and red wine with dinner

Aaaah that's romantic for Valentine's Kintsugi Grin as long as he cooks on other days too! I got a pretty plant but not cooked for, (though he does quite a bit). Difficult due to our totally different diets!

S. 2 ryvitas and 2 slices spelt toast with pnut butter, fresh onion. (I'm hooked on them!)

DH often cooks at weekends so not unusual and always prepares weekend breakfasts. I’m not sure if it was Valentines related yesterday or not really as 2 x DS’s ate dinner with us so hardly romantic Grin

Kintsugi He cooks the meat for himself which he doesn't have for every meal. I do the veg and salads for him sometimes.

Yes we're on our own . The adult children are in London. We tend to eat breakfast together, If we're up at similar times. We lead fairly separate lives, which suits us.
