@vincettenoir I haven't tried the MM sausages - only the sausage burger/patty, which I love as a weekend breakfast treat. Pure trash, but delicious trash! Expensive though - I think it's £4 for two.

Good to know about the pannacotta. Will see if I can pick some up next time I'm at Tesco.

@almightybob @parttimedomesticgoddess Thanks for the pizza inspiration. Going to check out White Rabbit, and also have a go at making my own. I have the Bosh cookbook but haven't yet attempted any recipes.

Here's my day. I keep forgetting to post here so hopefully sporadic contributions are acceptable!

B: Porridge with strawberries, blueberries, flaxseeds and coconut sugar.
L: Leftover rice with stir fried veggies and beans. Dates and banana.
D: Leftover lentil bolognaise with brown pasta. Raspberries and grapes and mashed banana.

It's basically been a day of leftovers!

Meant to say yes the good fellows falafel pizza was tasty, but I think the best are from proper indie pizza places. If the dough is good it makes up for the lack of cheese IMO

Thankyou very much for all your tips about smoothies my kitchen aid blender is lovely I'm hoping it will last forever like the mixer I have. I am faithfully and I thought accurately recording my calories on mfp till I read at the back of one pot Vegan the calorie content of dishes and realised I've been grossly underestimating my calories. My meals are all vegan and made from scratch but I think I am having huge portions. Also forays into vegan toffee tarts with lots of dates, nuts and nut butter may be healthy but hugely calorific. I think I've had that pb fit powder before good idea to add it to smoothies.
What does everyone else have for a 4pm pick me up to last till dinner. I'm really inspired by all your daily meals so tasty and varied.

B 2sl toast and rasp jam
L hm tyscan bean soup
D I pitta with riadt cauliflower, Tahini chickpeas from the green roasting tin

Snacks 50g dark chocolate

Bought the broke vegan it sounds good especially for store cupboard meals with no hard to get ingredients xxxd

L: leftover cauliflower bake from last night
Snack: crackers and tesco herb soft cheese alternative - which tastes nice but has a very odd wobbly yet slimy consistency, which means I have to keep testing whether I have decided I like it or not
D: spag bol
Snack: grapes
Snack: more crackers
Snack: iced bun

@Coconut80 how was the roast cauliflower and chickpeas? That's planned in for Wednesday night this week here. Today's snack is one of my standard 4pm go-tos, also good because it will happily sit in my work lunch bag until tomorrow. I'm also fond of a dark chocolate orange rice cake. Do you like miso? If you do, a cup of miso soup is a great way to deal with hunger pangs. Savoury enough to leave me feeling satisfied, but less than 50 calories.
@Sendmetobarbados i agree with @KobaniDaughters about pizza by the professionals, but it's not always an option. If you get on with the Bosh dough it also freezes well, and I haven't tried it but you could buy a pizza base and do your own toppings. I haven't tried the jus-rol pizza base, but everything else of theirs is good and that's labelled as vegan on the Tesco app
I also really liked the MM sausage patty, reminded me of a Mac muffin which I think is why @AlmightyBob calls it trash Grin
My DH would never ever choose to cook (he can if he has to) and he does loads of other things that I'm not good at, so that works for me

B:date/coffee/pb/banana/soya milk smoothie
L: soup from yesterday with nooch and crackers
D: 2 Richmond sausages, 1 hash brown, big mushroom, roasted tomato, spinach, vegan black pudding, spinach, baked beans and a slice of toast
S: Apple and a small handful of unsalted cashews

I love roast chickpeas and cauliflower - gimme that and some lemon tahini sauce and I’m very happy!

L: avocado, kimchi and green veg salad
S: went to a vegan coffee shop and had a mushroom Ayurvedic latte thing and a spoon of DD’s tiramisu, nibbled on dry mango while cooking dinner
D: green roasting tin sticky rice and broccoli

Oh I do love this thread , you're my people!!!! LOL at trash! Almighty I did buy some veganburgers in (whispers) Iceland In Eng. they were acceptable ,esp. for the money!!! Though I could make much nicer ones. luckily I've got the time now. I'm going to do 2 batters for pancake day today!!!! one with eggs for dh and one with yeast ,an experiment. PartTime you work outside the home and are a DG AND have time to come on here!! not to mention the dcs, Blimey!! Flowers

B. fab pear juice\filtered water,ground linseeds, pears ground ginger, smoothie.
L. Large salad with endive, brussels,lettuce. shallot. olive oil\basil dressing with toast and pnut butter.
Sn S. Miso soup then sprouted oats and molasses with the oatmilk I made yesterday

That's exactly it @PartTimeDomesticGoddess - they remind me of sausage mcmuffins too, which I used to love. It's absolute wizardry what they can do these days with veggie sausages and burgers.

@AlmightyBob it didn’t really go sticky for me which was disappointing though it was still tasty. I think I need to adjust some things - a few of the recipes have ended up being quite watery for me so I don’t know if that’s an oven issue on my end? Or maybe I’m not using the right kind of roasting tin and need something shallower

The others wolfed it down though

The cauliflower, chickpea and Tahini is delicious I added some greens and preserved lemons it's very tasty and rich. I found the broccoli ans sticky rice a bit disappointing too. Its my fav cook book just now really like slow roasted tasty dishes like the three bean chilli.

Yes I like miso ill have a look in the health food shop tomorrow. Had pancakes with date puree as a sauce they were delish and very filling I made them with oat flour and banana. Xx

@Coconut80 I actually haven’t done the slower ones yet or tried veganising the veggie recipes, does feel like the flavours tend to be great so I just need to tweak a little for my finicky oven

It could be an oven temp issue @KobaniDaughters - sounds like the liquid didn't evaporate enough?

I haven't tried the three bean chilli - will need to give that a go at some point. But not before revisiting the dal, which I think has been my favourite so far.

Today:
Breakfast: oats, half banana, cacao nibs, peanut butter, spoonful ground flaxseed, oatmilk. Health! It is indeed filling me up longer as planned too.
Lunch: mug of roasted butternut squash, tomato and pepper soup, v thin slice of sourdough and naturli
Dinner: fried rice with brussel sprouts, mushrooms, carrots, marinated tofu, in soy, mirin, ginger and garlic sauce.
Snacks: two satsumas.

Fucking fridge freezer's on the blink, it's making a terrifying noise. So I've turned it off and w.e've got to get a man out. (sexist! but probably will be a man I guess). So tomorrow we'll be eating a lot of freezer food I expect.

Did anyone else try vegan pancakes today? Mine were a surprise hit with the children. Drowning them in syrup and Vego spread probably helped Grin

B: porridge with banana and blueberries.
L: homemade carrot and coriander soup. Watermelon.
D: spicy potatoes and chickpea curry. Pancakes with syrup, banana and strawberries.

L: (mid afternoon) fruit and a cuppa soup as starving!
D: A Jamie coconut rice dish from his 15 min book. We have it with Tofu in place of Salmon.

We had our vegan American style pancakes for breakfast but then afraid i broke veganism for british style pancakes for dinner, but we got the eggs from our friends who keep 3 hens in their back garden and you’ve never seen more indulged pets! I just have never managed to make decent vegan british pancakes (used plant milk and fake butter)....had a savoury one with cashew truffle cheese, sautéed spinach and olives, then one with lemon and sugar and a third with sliced bananas and cookie butter

Forgetting it's pancake day has become more of a tradition in our house than pancake day itself! I have had success with vegan pancakes in the past but only scotch pancakes, not the pancakes I associate with PD itself - the thin lacy kind my mum used to make that you roll up with lemon and sugar.

Ref. sticky rice I think you can get ready to cook, but it has additives so I just make it on the stove like I make 'normal' rice. I soak it in the cooking water for an hour or so (the water is half a thumb higher than the rice) then put on heat with the soaking water (don't strain it) then bring to the boil, for 5 mins without a top, then cover tightly and turn the heat right down. leave for 10 mins or so then test for stickiness, if it's too wet turn up the heat and repeat the last process till it reaches the texture you want.

B. Leftover pear smoothie.
L, spinach added to leftover miso soup with quinoa\rice crackers.
S. Sn. Delicious oatmilk/spelt flour\yeast pancakes 2 with gently fried mushroom,onion.tofu yoghurt sauce, one with molasses. The yeast doesn't help the pancake stick together very well, but as I thought, i"It all goes down the same way". Not anything really like those thin crispy ones Almighty. Though the dh's egg batter ones were like those of course! but mine tasted lovely!!

Your breakfast sounds great. Are the linseed ds for bulk or to help bowels!!!!! Glad it kept you full. Going to try one for lunch to avoid more sourdough that I am addicted to xx
