B. Gf Oat, cranberry and orange biscuits (this my gf equivalent of a pastry on a Saturday breakfast)
D. Tofu , chilli amd garlic stir fry. Steamed pak choi. And beansprouts. Rice noodles.
For support later on I have some Oatly vanilla ice cream, frozen cherries (defrosted obviously) flaked almonds and chocolate sauce (the squeezy stuff is now a vegan recipe)

L hm lentil soup with hm sourdough
D Barley Leek and tomato bake
Sluce hm vegan chocolate fudge cake it was really dry can anyone recommend a good moist cake recipe. I love baking but so far my vegan attempts haven't been that good x

Oooh. That just reminded me i bought natural soya yoghurt to make pancakes. And I have vg bacon and maple syrup.
That's tomorrow's breakfast sorted

hello!

B: sourdough toast, Naturli and raspberry jam
L: dal and rice
D: orzo with mushroom and spinach. Saturday is pizza night and I made everyone else's pizza as usual but I just didn't fancy it - I wanted a big bowl of orzo. So that's what I made myself, with homemade veg stock and everything. You guys might already know this but you can buy huge bags of dried shitake mushrooms very cheaply from Asian supermarkets and they make amazing stock.
Snacks: banana, salt and vinegar peanuts, three Oreos.

@ZaraTheWonderDog I live round the corner from a Japanese supermarket and did a bulk shop yesterday to top up my dried shiitake mushroom supply! I also buy all my soy, mirin, sesame oil, noodles etc in bulk there and helpfully have an Indian store not far away and do the same for spices and pulses and rice. When first lockdown happened and you couldn’t find staples in the usual supermarkets both places were a godsend (and also have freshly made food for sale too!)

L: disgusting but delicious kimchi noodle pot (basically pot noodle from the Japanese supermarket) with tofu, blueberries
S: orange cake, savoury muffin, trail mix, dried mango
D: aubergines and tomatoes roasted in harissa with bulgar wheat, popcorn

L: spicy bean burger, plant kitchen coleslaw, cherry tomatoes, beetroot
D: veg and bean stew with dumplings, almond magnum
S: alpro cherry yogurt, M&S posh nuts

@Kobanidaughters - are they round the corner in UK terms or US terms? I'm on the outskirts of Southampton and have a Chinese supermarket and a World Food Store which are both awesome for all sorts of things within about 15 minutes drive. In normal times though it could take you at least half an hour to get there if traffic is against you, so they don't always feel very close to me!

@Coconut80 are there cake flavours that you are most interested in? I have a ginger cake recipe that's naturally vegan and quite squidgy (awesome with custard). @Kobanidaughters shared a lovely recipe for a cardamom cake ages back (possibly on our first thread??) Oh, and I did do a chocolate and rose cake in the summer for my birthday, which was good. That was from the ms cupcake book. Let me know if you want me to share any of those.
I'm also going to be trying nigella's lemon polenta cake and and gingerbread recipes soon (from her new book). I haven't found a brownie recipe that I like as much as my non-vegan one which is really annoying me. I'm going to try something with crack'd egg replacement today if I get time...

For chocolate cakes (just because you mentioned chocolate cake) here are some ideas

has never let me down. It is very moist but also quite light (and delicate - you need to be careful when turning it out of the tin). I also see this one by Nora Cooks recommended a lot by people who say it's their absolute favourite - I haven't tried it yet, though

I've got the Ms Cupcake book too, @PartTimeDomesticGoddess . I like it best for cookies, cupcakes and traybakes. I made my youngest daughter the Neapoliltan cake for her 10th birthday and it was a bit of a disaster :( but looked impressive!

Lidl restocked some items for Veganuary. Got nutritional yeast, and some vegan cheeses. Not keen on the fake Parmesan, but the vegan feta is OK.

Oh nice @ilovemydogandmrobama2 I’m in Mar Vista! Are you American or british? How old were you when you moved to the U.K. (sorry total thread derail but am constantly trying to get us home so always interested if people grew up here and moved back in childhood)

Thankyou all so much for the cake recipes, what a lovely thread. What is the cupcake book you mention, I have bought a few vegan baking books for my DD but they have been disappointing. I would like to buy her a good baki g one as she is stressed doing her higher work from home and very worried about exams/assessments/unknown so needs a treat. Off to see if I have ingredients to try any of these tonight. Very jealous of people with exciting ingredient shops I live very rurally on an island 2.5hrs away from the nearest city which has a wholefood store xc

It's very good - sometimes vegan baking recipes can be a bit dull and worthy, but there's not a bit of that here. Whereabouts is your island? (no worries if you'd rather not say).

Today:
B: sourdough toast, Naturli, raspberry jam
L: dal and rice
D: veggie sausages, grilled garlicky portobellos, mashed potato, roasted sprouts with shallots and thyme, graaaavy. Made by husband. Then two thimble-sized 'coconut collective' chocolate pots which were quite nice, but bafflingly small - hence two, though to be honest I could have eaten all four. Everyone else had bread and butter pudding.
Snacks: couple satsumas.

L: Protein shake and a banana
D: Spicy bean burger in brioche bun with tomato, lettuce, beetroot and Mayo. Just a few chips and large salad

Yesterday was
L: bottom of the fridge soup with crusty bread
D: hm quiche (made with roasted butternut squash, grated violife, nooch and crack'd egg replacement). It was ok but think I'll stick with the tofu quiche in future. Eaten with a few air fryer chips, beetroot, cherry tomatoes, cucumber and plant kitchen coleslaw. And an almond magnum for pudding
S: 3 small chocolate tiffin bites (still working our way through Christmas treats!), a family size bag of sweet and salty popcorn and an individual soreen mat loaf

Oh Hello, joining for inspiration...
Today for me
B:granola, all brand type stuff, frozen Raspberries, banana, seeds and Unsweetened soya milk
L: tofu scramble, seedy toast and baked beans
D: fake chicken burger (aldi) cut up and stirred through a mixed grain sachet with Spinach, tenderstem Brocolli and edamame

Bit processed and dull but we are both working long hours and homeschooling and we ate well over the weekend

Yesterday
B. Facon butty and hp sauce.
L. Quorn chicken bits with garlic stuffed olives. Celery sticks and houmous.
S. Oatly vanilla ice cream with raspberries and blueberries and chocolate sauce.
D. Seeded biscuits with houmous and kimchi. Celery sticks. Sun baked tomatoes.

L. H/M golden vegetable soup. (Can't actually remember what was in because it was batch cooked and frozen. Definitely celery. And maybe a carrot or two? - I think it was general fridge soup)
D. Haggis, neeps and tatties - what else? 🏴󠁧󠁢󠁳󠁣󠁴󠁿
(We also had brocolli and a facon and leek cream whiskey sauce) there were kilts and pipes (well Spotify pipes) and ds9 addressed the Haggis. Great fun.

B: mushroom and spinach orzo from Saturday night because I'm a grown up and I do what I want
L: Roasted butternut squash and tomato soup - DH made it, and it was delicious. And a slice of sourdough toast
D: Linguine aglio et olio, salad with little gem, tomatoes, avocados, red onion, cucumber, red wine vinegar and olive oil as dressing
Snacks: banana
