B: hummus and tomatoes on sourdough toast
L: leftover linguine aglio et olio from last night, and another slice of hummus on toast
D: a vaguely Thai-flavoured noodle soup based on a Nigel Slater recipe I saw in the Guardian, with some miso-roasted tofu, broccoli and spinach through it
Snacks: banana, several satsumas

L mixed chickpeas salad again! With lettuce, tomato, cucumber, sweetcorn, celery, gherkin, beetroot and pickled red cabbage. I need to come up with some new ideas

D roasted sweet potato, carrots, parsnip, courgette tomato and mushrooms with fresh basil

S pink grapefruit slices, followed by mango and cardamon smoothie

Yesterday was
B: slice of wholemeal toast with naturli and marmite
L: leftovers from the lentil/smoked tofu dish to which I added beetroot, cherry tomatoes, a handful of lambs lettuce and some raspberry balsamic vinegar
D: courgette, lemon and pine nut pappardelle with broccoli
S: gingerbread

Oh how I love this thread for inspiration!

Every post I read makes me smile when I think of all the “whatever do you eat?!” comments we receive from meat eaters.
I’m enjoying my food more than ever at the moment. DH and I say it’s almost like we know a fantastic secret and are waiting for others to catch on.
Does that make sense?

Ohhhhh !!! Thanks PartTime I did wonder if it was you Kobani Grin i'm pleased you made it back, and had a great time in Eng. so the news saying that the USA closed the borders wasn't quite the case.

I agree Kinsugi They also think that they can't get enough protein from a vegan diet which is ridiculous. They forget that most ruminants and gorillas don't eat animal protein. and grow very well indeed !

B. Leftover smoothie half a lemon Capuccino with almond milk
L. Endive,green salad, onion with horseradish\basil\olive oil dressing. 4 small slices of rye loaf. with pnut butter.
S. HM Leek\onion crumble type dish with spelt\garlic\oregano topping.

I'm a relative newbie to this way of eating so this is a useful thread.

Yesterday was

B. oats, berries, apple, ground flaxseed, chopped nuts
L. tofu scramble, spinach, mushrooms, wholemeal bap
D. cauliflower steak, roasted new pots, steamed kale
snacks. flaxseed and pb muffins, brazil nuts, gin Grin

I thought I might lose weight throughout January but I seem to have gone the other way. It's perhaps just that I need to become more aware of the nutritional contents of some of the ready made products i.e. the 'cheese'

Today I want to make something using the glut of onions I purchased last week . Any suggestions?

ppeatfruit I’m afraid I’m one of the protein worriers, mostly triggered by DH. We get enough I think, but it’s something I’m aware of at every single meal time.
I also find some recipes lacking and this is one of my gripes with the Green Roasting tin book

@Libertynan for your onion glut, what about Mejadra . The recipe I used features 3 or 4 onions, fried until crispy golden and stirred through the lentils and rice at the end. I know @Ginfordinner made and loved it recently too.

Or maybe Nigel Slater's roast onions with miso and sesame which I haven't tried but want to.

I'm not eating junk right now because 12 hour days in the NHS are exhausting enough without real food so avoiding buying ready vegan meals. I've been cooking the night before so I'm ready to go in the morning.

Breakfast: Fridge porridge with natural vegan yoghurt and frozen fruit. Mix all ingredients together and leave the porridge to "cook" in the fridge overnight.

Lunch: Vegan mince stir fried with a rainbow of vegetables served with parsnip and potato mash as a sort of cottage pie.

Dinner: Lentil soup with bread.

Snacks: Handful of walnuts and drapes, banana and naked bar if I get desperate

I can't eat much right before bed.

Plus I'm the only staff member who hasn't been off sick for a year. So much for pale wan little vegans!! And I'm 60 years old.

@Ginfordinner oh yes good shout! I've never used agave, I really should.

We revisited the chermoula aubergines tonight - I roasted them for an hour at about 170-180 and they were great, really soft and falling apart. I can't believe I ever disliked aubergines. Had them with bulgar wheat.

I'm stuffed.

Brown rice syrup is another good honey sub (not quite so sweet so you might have to adjust the quantities a bit)

Yesterday was
B: porridge with raspberries, golden syrup and seeds
L: marmite sandwich, beetroot, cherry tomatoes. Dates
D: chickpea roast, roast new potatoes/butternut squash/cauliflower, cabbage, broccoli and gravy
S: Apple and a spoonful of peanut butter

Raspberries, mango, pasta pesto (DD leftovers), cup of Mung bean soup, cucumber and hummus, crackers and bitchin’ sauce, Bombay mix, pistachios, cashews

Just home from a huge Lidl shop. I wanted to get lots of the Veganuary stuff in before it all goes. Unfortunately my freezer is full so had to limit myself.. Grin

Today is
B. smoothie - water, soya yogurt, vegan protein powder, ground flaxseed, spinach
L. meatfree farms burger in a wholemeal roll. I LOVE these burgers!
D. think it's going to be Lidl Vemondo Pizzas and salad

& DH is making one of my favourite dinners: a veganised version of Ottolenghi's persian noodle soup with flat bread. I love it so much.

DH and DD didn't fancy Veganuary but decided to do veguary instead so I grabbed them a Greggs Belgian bun each to keep their spirits up but I didn't succumb myself. I have a vegan crunchie in the cupboard that I am saving for a special occaision, it's massive!

The crunchie is made by the vegan store and I found it (after reading about it and visiting various co-ops) in the free from section. After saying I would save it I did just try a nibble and even thought I am incredibly greedy it will last me a while as so sweet, it is just like a fat crunchie... It wants to be for £2.50 Smile

ah that soup looks amazing. I'll have to think of something to replace the butterbeans as my husband has a real grudge against them - do you reckon cannelini beans would work?

I am going to have to track down a vegan crunchie as a matter of urgency.
