I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

I have just been drooling over a recipe for coconut crusted tofu with sweet chilli sauce that has popped up in my feed. Wondering whether I have all the ingredients at home... It's from wellvegan.com if anyone is interested.

Pie:
Sweat potatoes, carrots, potatoes, onions and mushrooms if you have any.
Add stock cube, bit of flour and water. Cook til soft.
Put in individual pie dishes. Cover with Jus-rol puff pastry (it's vegan!)
Bake til golden.
Yum!

We had Jamie Oliver's vegan shepherds pie tonight. It is so delicious that meat eaters enjoy it as much as veggies/vegans.

I have just had a look at that site choppolata. Where would I find coconut sugar?

Iamastonished I was sent some once in a Vegankind box but I've never seen it in a shop. US vegans need to use alternative sugars as apparently the majority of their sugar is filtered through bone char, so you often see unusual sugar listed in recipes. I imagine you could use normal brown sugar, that's what it looked like to me. Demerara rather than muscovado.

Quick and easy option tonight, Tesco frozen mini vegan sausage rolls and baked beans with onion and tomatoes in (dry fry them together until mostly cooked then beans on top, mix and heat until beans are ready.

Here from other thread. Veggie already but placemarking to get ideas. I already make hummus a lot (DH could live on it) but I wanted to ask other vegans how you make sure your children get all the right nutrients. Not in a gf way, but in an 'I want to be like you' way.

Also not vegan but eat a lot of vegan meals!

This pie is lovely- just top with mash/mashed root veg instead of filo and it's vegan friendly.

Otherwise South Indian food is a great place to look for recipes. I make chilli with quinoa/lentils which is lovely also.

That pie looks amazing @editecho - definitely on the list! Is filo pastry not dairy-free? Or is it the brushing with butter? I wonder if coconut oil would be a good sub??

Actually you are right, filo is vegan. Perfect- I brush it with olive oil normally so that shouldn't be an issue!

I'm going shopping this afternoon so i'm having a bit of a planning session...
...tonight i'm doing sweetcorn fritters with salad and salsa and wedges, ...tomorrow is Pizza (garlic mushroom and herb no cheese for me, usual toppings for kids)
...sunday is going to be spag bol made with soya mince (and nobody is allowed to complain because it's mothers day!)

afraid I can't find a link to the Madhur aubergine curry fauxfox but I can report it was delicious. Curry Easy Vegetarian is packed with good stuff, worth finding a copy, roast cauliflower, great dals etc etc

I accidentally did vegan kids tea last night - stir fry with a whizzed up peanut butter / sweet chilli / tamari sauce, sesame seeds and cashews. total success!!!

I got my vegan society starter pack (three cooking books for £9.99) today.

Lots of useful information in there like listing which foods give what (iodine=seaweed and cereals etc.) and to eat vitamin C with iron foods. Really quite useful.

Tonight I'm making the creamy mushroom lasagne out of one of the books. Fingers crossed but everything has been tasty so far Grin

River Cottage stir fry cauliflower with fluffy rice and steamed green beans. Not vegan myself but that's tonight's dinner.
Tomorrow is linguine with garlic, chilie, olive oil and purple sprouting broccoli.

I'm making linguine alfredo with sautéed mushrooms, spinach and peas.

If you steam a cauliflower and blend it with some nut milk, nutritional yeast if you have any, garlic, onion and seasonings it makes a really delicious creamy pasta sauce.

I have been shopping - I am stealth vegetarian-img the kids by feeding them quorn chicken nuggets...do you think they will notice? They are not vegan but I literally could not bring myself to buy the actual chicken ones so...

And they liked the sweetcorn fritters I invented too! I had a mini one to test it and they are gorgeous will be even better with extra onion and chilli in when I do them for DH and I later Smile
