I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

We have recently found out my DD is allergic to sesame - so we have had to clear out all our sesame products such as tahini.

Sorry posted too soon - meant to ask if anyone had a good alternative to Tahini - I've been using garlic yoghurt as a side with Falafels etc but any ideas what I could use instead in the actual cooking - peanut butter has worked in some Chinese recipes. Would nutritional yeast (not used it before) work in something like a nut roast do you think?

Worm I have had sunflower seed butter before that was a bit like tahini. If she's allowed that I would give that a go, but if not peanut butter.

I tried oat milk today for the first time after reading and hearing loads of negative stuff about soya and I can confirm that it's lovely in a coffee. So glad because I haven't got on with almond, cashew or coconut milk.
Has anyone found a decent vegan 'mozzarella cheese'? Bought the new tesco own one, was a bit rich and smelly. Have yet to find a decent vegan 'cheese'. Maybe I'll give up altogether and use different alternatives.

worm I second twentycups on the sub sunflower seed butter for tahini(eldest dd allergic peanuts and sesame with epic pens)cashew butter isn't too bad either.now dd1 left home we do have tahini in house,but obvs not peanuts as proteins are airborne (sigh)

Will try oatmilk in my coffee it sounds lovely.

Have recently gone from soya to koko milk in my tea and I am enjoying that.

Oat milk is lovely. I made a vegan banana loaf and lemon drizzle cake earlier and the oat milk gave them a lovely creamy taste.

Is oatmilk high fibre(poss a stupid question?)lil zoo has to have plant milks.I try not do rice too often(her favourite)because of the high arsenic levels.she likes almond and cashew.she's 9 but guts not great too much fibre and she has porridge couple times a week

We were advise this by NHS dietician.its unsuitable as an exclusive milk for preschoolers. Plus not to buy organic plant milks for her as they aren't fortified with calcium as its not possible to verify organic grade of supplements

We had chickpea burgers (homemade burger with mushed chickpeas, Italian parsley, onion, and cumin) w posh buns, vegan mayo, barbecue sauce, grain mustard, lettuce and homemade spicy dill pickles. We also had sweet potato chips.

Had yummy aubergine coconut curry (olive mag recipe) with brown rice last night. DH cooked the rice as per Thug Kitchen and it was lovely 😊

That's great about the new Vegan MN section Star maybe we can leave this thread here and I will go through and strip out all the recipes/links to start some new threads in there to see how it goes? What do you think?? My only worry is that the new section won't be as relaxed about it all as this thread...we are quite hidden in Food and I quite like it Grin

Oh I am also making a fruity Tea Bread as we speak - it is in the oven, standard recipe with egg sub powder for the one egg required so hopefully will be nice Grin

Spiced chickpea burgers sound great! I had burgers Friday night and yesterday lunch but they were frozen Morrisons own - pretty nice though I think!

I'm not vegetarian/ vegan but I cook vege meals quite often and am trying to have more meat free days. I also recently started to get a veg box so needing inspiration for some veggies I've never bought before! Really enjoying this thread and have ordered one of the Thug Kitchen books on your recommendations. I am sure many of you have it already but I can highly recommend The River Cottage Veg book.

Last night I made a fantastic Cauliflower and yellow lentil curry from Jamie Oliver's Family Superfoods book (not a vegetarian cookbook but has some good veggie recipes). Doesn't sound exciting but cooks for ages in the oven which gave it a really fantastic flavour.

Also Jus role pastry is vegan! Who knew! Before I met my DH I went out with a vegan for a while and I wish I'd known that then Grin

Baked sweet potato, black bean chilli and a griddled corn, spring onion, tomato,coriander and lime juice salad on the side tonight.

Planning to make Briam tomorrow night - used to use a traditional potato and courgette only recipe but have used one from the Jamie Oliver site recently which also has aubergine and more tomatoes in it which the kids like better - I think technically it becomes Tourlou when you add veg other than courgettes rather than Briam though.

The leftovers taste fantastic the next day at room temperature. It works really well for us as a mixed family when the carnivore needs meat as it is easy for him to pop a grilled chop on the side and the veggie kids can have a bit of feta/ cheese with it
