I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Seriously though - that all sounds like a really sensible approach. We have gone from full carnist to attempted vegan and there are lots of things that catch us out, so we are being pragmatic especially while we adjust and while we learn more about nutrition.

Tonight we are having Patatas Bravas with green salad - smells amazing Smile I had new potatoes that needed using up so it seemed like a good idea!

I made this lentil mushroom pate to have in sandwiches, it is very very good. The recipe is vegetarian but if you just use olive oil instead of butter it's vegan.

That pate looks fab tempeh - definitely going to give that a try!

I love falafel twenty ...I think the reason I'm finding it relatively easy to go straight to vegan from omni is because nearly all the food I really like is vegan or easily veganised anyway! I have eaten the meals that I really want to eat much more since becoming vegan because DH has too and before I was having more of his preferred food instead of things I like most. Winning Grin

I've been veggie for 12 years and slowly transitioning to vegan. I've been drinking vegan 'milk' and 'butter' but still eating cheese and chocolate sometimes Blush. Hoping this thread can help me push forward to eating fully vegan.
The thing that makes it more complicated for me is that I have coeliac disease so I can't eat any gluten, feels like I'm restricting my diet even more by becoming vegan, it's going to be especially hard eating out. But then a little bit of inconvenience for me is nothing compared to the awfulness that is the dairy industry.
btw if anyone lives near a zizzi pizza I can thoroughly recommend their vegan menu (they also do vegan gluten free dishes!). Don't feel like I'm missing out at all when I go there.

Another okay day here.

-Soy latte for breakfast
-Snack of the rest of the carrots and humous
-Lunch- slight fail- business lunch- preordered ages ago and I asked for fish, so I ate it because not eating it would have made no statement at all and just resulted in food waste.
-Snack- chickpea crisps (nice) and raspberries
-Supper - avocado on oatcakes- checked packet- have milk powder in them- crap, but again, I'll just buy a different brand next time. Not going to chuck in the bin as the demand has already been registered when I bought them.

bought some of that preflavoured tofu from Waitrose
expensive but really worth it in my view (hate cooking)

also surprised how far it goes, it looks like a small pack but it isn't. I am wondering if anyone knows how long it will keep in a Tupperware - i don't really want to eat it for 5 days in a row? Thanks in advance if anyone knows.

Goldfishjane, google reckons 3 - 5 days for tofu once opened. Never managed that long without eating it in my house!

that was why I was hoping it would keep for longer. It's just me eating it so I can't really justify paying that and chucking it out after 3 days. Shame as the basil one is particularly nice. Is a week really a stretch? The date on it is mid May anyway, so keeping it in an air tight container...?

I don't want to give myself tofu poisoning!!! Which I've never heard of to be fair...

cantsee, I am trying to go straight from carnist to vegan as well and am struggling at times too. I love this thread and twenty's advice is great. I wish I could do it overnight, but I just don't think that's going to happen. I like the thought (thanks twenty), that every vegan meal helps a bit.

I've managed to keep tofu in the fridge for 5-6 days with changing the water daily. You can also freeze it but the consistency changes when it has been in the freezer. Some people like it better that way but I personally think it becomes too rubbery.

Goldfish rather than try to store or freeze tofu on its own you could cook something using it and freeze that? I have made stews and curries (mostly Thai red) with tofu before then frozen portions of the whole dish. Means you don't eat the same stuff for days on end and handy to have a homemade frozen meal on hand for rushed dinners. I cook for two people and most recipes are for four so I do this regularly.

Goldfishjane I have two packs of that tofu in my fridge right now! Delicious. It's only 196 calories per half a pack, so you could easily eat that much at one sitting (or quarter lumps as a snack which I sometimes do).....

Easy dinner: daal? Red lentils, half an onion if you like, veg stock cube, various spices as preferred (eg curry leaves/coriander/cumin/turmeric/garam masala/cinnamon stick), coconut milk/cream and water to cover. Mix together and leave to bubble at low heat until sludgy. Eat with flatbread/rice.

I went out to see NT live Thing at the cinema and took a picnic of veg sushi from Waitrose, cashews and vegetable crisps - yummy (and the play was great too!)

On frozen tofu, it does change the consistency but I find I like it for tofu ricotta after it's been frozen

Dhal! I always forget it - gonna make it next weds (yes planning mega ahead)

I've got a couple of friends coming over tomorrow and my Imperfect Veg box arrives in the morning - I'm so worn out and craving comfort food (and today was a fast day) so I think I'll be making vegan shepherds pie. I normally just do my own recipe but might follow the one in the second OSG cookbook just for a change

Eating on my own last night. Made roasted red pepper and almond "pesto" on spaghetti and some garlicky spinach with lemon on the side. Sometimes the easy dishes are the nicest!

Probably making Tofu katsu curry tonight

Last night I did a Thai green curry with aubergine and green beans and rice noodles. The leftovers will be for lunch then later will be a BBQ so probably one or two vegan burgers (Morrisons) and mixed salad. Plus drinks!!
