If time is against all five chefs it’s probably because they haven’t been allowed an appropriate amount for the task

Regarding scallops I just need to say I had divine scallops last week in Cornwall. None of this nicking the coral for a sauce or something and artfully slicing the remains white part into two or three tiny slices. I had three whole scallops swimming in the most delicious herby butter and I mopped up every bit of that butter with some nice sourdough.
(DH is dairy free and was presented with a large pile of olives! He ate them all).

Pastry work/dessert etc is very specialised. Really difficult for anyone but especially Mark, who's a big barbecue guy!

I was just saying the exact same thing. Pastry is very exacting and not like throwing a chunk of meat on a BBQ.
