Personally speaking Jive is my least favourite Latin dance as it's the one I struggle with the most. Before I started dancing I thought I'd hate the Samba but actually I love it!
Each dance has its own characteristics: the Cha Cha and Rumba are both very similar, certainly at the lower levels the majority of the figures you dance are the same, the difference is in the timing.
Samba you can just let rip and really throw yourself into a party!
Paso is more like a ballroom dance when you look at the footwork involved. As my teacher always says, you can cover up a lot of mistakes in Latin by just wiggling your hips, but there's nowhere to hide in Ballroom!
Waltz is a really hard dance to get right because it is so slow. When I first started dancing it I frequently had sore ankles from the rise and fall and would feel myself losing balance when dancing practise squares.
I found Quickstep a lot easier than Waltz and love dancing it.
I've only recently started Slow Foxtrot but am enjoying it.
I haven't danced Ballroom Tango yet but years ago did a course in Argentine Tango which was great fun. At a social level (non-competition) it's very relaxed and informal.
Salsa is my first love, it's where I started out and I taught it for 4 yeasts. Unfortunately you rarely see a good salsa on SCD these days, the routines are more like pop videos 
I think the music is vital to whatever you are dancing, I'm not a fan of shoehorning modern music in where it doesn't really fit. I particularly hate Paso's and Tango's to a lot of the rock music they use.
