feel sorry for Ian. I think they were editing a lot of it earlier to make him appear arrogant, but now he seems so nervous. And he is good. Even when he seemed smug, he was still pretty decent at baking. Hope he remembers what to do.

Is the staggered start just so that they finish at different times and can each be judged as soon as it comes out of the oven? They said it was because it was such a quick challenge, but that shouldn't make much difference - they've had quick ones before. It must be something about them not interfering with each other, or needing to be judged all at exactly the same time or something. They'll have to judge them outside the room though or the others will know what they'll be looking for!

I think because soufflés have to be aeatn as soon as they are ready because they fall flat very quickly once they are out of the oven. It's the only fair way to do it.
