I make chicken satay kebabs by threading raw diced chicken breast on to a metal skewer with chunks of onion and tomatoes and drizzling over peanut butter mixed with hoisin sauce, grill until cooked thoroughly and serve with savoury rice and a bun if you like !

Buddah bowls. I love the variety, stick in what you have/fancy. But stuff like quorn or halloumi, peppers, cucumbers, spinach, chickpeas, avocado, quinoa.

Grilled sweetcorn with chilli butter and aloo naan for starters, halloumi and mushroom on brioche buns with mango jam or braised bbq beef sandwiches for main (with a bowl of salad anyone can help themselves too), and cornish ice cream for dessert - surprisingly quick and easy

I have a really old recipe for a goats cheese, spinach and artichoke heart lasagne with a pesto sauce. It's much lighter than a traditional lasagne and with some warm bread and a couple of salads is great for lunch if we have friends over.

MotherofPiggies · 11/06/2022 15:44

Spanakopita (spinach and feta filo pie) with new potato and broad bean salad is my go to summer lunch dish for friends.

BetterCallBarry · 11/06/2022 15:49

As strange as it sound my family love a veggie English breakfast as a dinner.
Veggie sausages
Fried mushrooms and tomatoes
Fried eggs
Toasted brioche slices
Baked beans
Hash browns
And of course a cup of tea.
My kids say yay when I tell them we're having an English breakfast for dinner.

I’m making these tacos for friends next week, they are a family favourite. So easy, everything can be prepped in advance so when friends come round we can just enjoy the company without worrying about food.

Since buying a gas BBQ. Bbqing is so easy and quick. We buy good quality meat and keep it in the freezer. So with salad and new potatoes it's a lovely easy summer meal

NerrSnerr · 12/06/2022 09:54

When it's really hot I love a Greek salad, mostly feta of course but with olives, cucumber, tomato and pepper.

We do a lovely healthy, raw salad of broccoli, red pepper and a pink lady apple all finely chopped with a dressing made of a mix of olive oil, balsamic vinegar, mustard, honey, salt and pepper. Sprinkled with toasted pine nuts and mixed. So simple and tasty and a perfect base for many summer meals. Lasts for days a perfect in the hot weather.
