What's your favourite summer meal that's a crowd pleaser with the whole family?

So many choices but I think I will have to go with a bbq with marinaded chicken, burgers and great salad using all the produce from the allotment. Friends around and lots of pimps.

My mum makes this amazing chicken dish with peppers, mange tout, cashew nuts and a honey dressing. Served at room temperature. We usually do it with the Avoca potato salad.

I've recently started making chicken kievs from scratch & they've been going down well with the family! Great meal to get mucky while making (especially dipping the chicken in the egg & breadcrumbs!) - perfect eaten in the garden with a lovely fresh salad!

When we've been invited to BBQs and asked to take a dish - a big bowl of pesto potatoes or potato salad has always been popular. Pesto stirred through a big bowl of pasta is another good one for a big crowd. I like to make a veggie option of BBQ veg skewers (courgette, mushroom, baby toms, onion, peppers and also great with halloumi added too). One of the salads I like to make which is a bit unusual is darker lettuces or spinach with thin slices of fennel and segments of orange. It's simple yet different and delicious.

Leg of lamb with rosemary and garlic, roasted jersey royals with parmesan and thyme and roasted peppers and salad. Then raspberries and strawberries.

Port trifle:
Sponge cake and raspberries layered in a glass bowl
Pour port over, rather than the usual sherry
Custard (I just buy a pot of the posh chilled stuff)
Cream
Flaked almonds, toasted
Make a port reduction from port and sugar, boiled until it thickens. Cool then drizzle over the trifle.

For a main, I like either a veggie lasagne or homemade quiche, served with garlic and rosemary little baked new potatoes and salad.

We love a cold picnic in the summer. I make sandwiches (usually chicken/sweetcorn/mayo and ham, cheese and sweet mustard) on nice bread/brioche baps, and cut them quite small so they are like finger food. We also have potato salad and panzanella with meat and cheese, crackers and raw carrots/peppers with hummus and loads of chopped up fruit. My kids eat loads when we do this, and there’s usually leftovers for the next day too. Man I’m hungry now.
